Job Requirements
- Degree in hotel or restaurant management preferred
- Minimum of 5 years experience in a fine dining restaurant environment
- Minimum of 2 years experience in a high-volume food preparation environment
- Flexibility to work extended hours including late nights, weekends and holidays
- Ability to work effectively in a team environment

Job Duties
- Assist with the development of standardized recipes for all menu items
- Ensure that recipes are accurate and updated as needed
- Ensure that all food products prepared meet the established specifications and standards
- Prepare bakery and pastry items according to forecasted needs and ensure their prompt delivery to designated outlets
- Assign tasks effectively for efficient labor use ensuring maximum results and timely daily production
- Maintain complete setup, cleanliness and organization of the Pastry Department and bakery areas
- Keep abreast of industry trends in pastry and baking
- Bake fresh pastries, desserts and bread for all outlets
- Act as a manager, team leader and motivator for the Pastry Department maintaining good relations with culinary team members and other departments
- Recommend improvements to production, service methods, equipment performance, scheduling, and quality control
- Ensure a sanitary, neat, clean, organized, safe and comfortable environment
- Review menu items and make changes as necessary, utilizing leftovers when possible
- Maintain kitchen equipment in clean and working condition, report and prepare work orders for repairs
- Create recipe cards for all menu items and train bakers
- Assist the Executive Chef with the annual budget process and make recommendations for the Bakery Department
- Enforce health, safety, and sanitary rules, regulations and standards according to health department requirements
- Attend meetings and training sessions as required
- Perform other duties as assigned
