Key responsibilities include adhering to Select recipes at all times, ensuring dishes consistently receive high ratings during evaluations, and confirming that the last orders served meet quality standards. The pastry cook complies with portion sizes, quality criteria, department policies, and procedures.

Specific duties encompass preparing sponges, fillings, toppings, frostings, and icings as well as assembling them into tortes, cakes, and pies. Decorating skills are vital for enhancing the visual appeal of pastries. The role also involves preparing garnishes, mousses, cookies, and cakes specifically for brunch service. Support is provided to the chef for brunch and special occasion dessert productions.

The ability to operate knives, hand tools, utensils, and equipment safely and effectively is essential for tasks such as decorating, weighing, measuring, maintaining temperature control, baking, cooking, whipping, refrigerating, folding, grating, piping, and coating. Proper food storage and rotation related to the pastry station are a part of daily duties. Flexibility and willingness to undertake other responsibilities assigned by the supervisor complete the expectations for this role.
