The Pastry Chef role at American Cruise Lines is integral to delivering exceptional culinary experiences on board. This position requires a talented and creative pastry chef with expertise in making a wide variety of desserts, pastries, breads, cookies, and confectionary items. The ideal candidate should possess a deep understanding of flavor pairings, aesthetic presentation, and culinary consistency to delight guests with exquisite sweet creations. Responsibilities include adhering to the daily menu matrix assigned by the Executive Chef, maintaining quality control, scheduling production of baked goods, and ensuring that all items meet FDA standards for food safety and sanitation. While working onboard, the Pastry Chef will enjoy comfortable living quarters and a unique working environment with well-equipped galleys offering spectacular views of America’s rivers.
The Pastry Chef role demands flexibility, problem-solving skills, and the ability to adapt to last-minute requests in a dynamic workplace aboard a moving vessel. Working seven days a week for 6-8 weeks at a time, the role involves long shifts up to 12 hours daily. The chef must also be physically capable of handling the demands of working on a ship, including standing for long hours, lifting weights, and navigating ship spaces during emergencies. Job Requirements
- An associate’s degree in culinary arts or pastry and baking, and/or 3-5 years of related experience
- Basic understanding of professional baking and pastries and food and beverage knowledge
- Problem solving skills
- Organization skills
- Self-motivation
- Ability to pass a pre-employment drug test
- Completion of a criminal background check
- Possession of Transportation Worker Identification Credential (TWIC)
- Ability to perform essential job functions with or without accommodation

Job Duties
- Oversee creativity and prepare all desserts, bread, pastries, cookies, and other baked goods required for the vessel each day
- Prepare and serve items in accordance with established procedures, recipes, portion size, and presentation standards
- Set-up, maintain, and breaks down station according to FDA standards
- Taste all products produced to assess quality
- Notify the Executive Chef of any product shortages or equipment maintenance issues
- Maintain accurate counts on all food items prepared to prevent discrepancies
- Schedule the production of all baked goods
- Always maintain an inventory of fresh baked goods
- Use food production equipment according to manufacturer’s instructions
- Maintain a professional appearance at all times
- Ensure that each guest has a positive and memorable experience
