This opportunity is for the role of Pastry Chef within one of Anthony Scotto Restaurants' fine dining venues. The Pastry Chef position is a highly responsible and creative role requiring a minimum of three years of culinary experience in high-volume, fine dining restaurants. The Pastry Chef works closely with Executive Chefs to design and develop dessert menus that not only complement the overall menu and restaurant concept but also elevate the visual and culinary appeal of desserts served.

In this role, the Pastry Chef is tasked with preparing a diverse range of baked goods including cakes, cookies, pies, and bread, utilizing both traditional and modern recipes. Innovation is key as the Chef creates new and exciting desserts to keep menus fresh and appealing to customers. Attention to detail in decorating pastries is essential to ensure desserts are visually stunning and exciting. Managing inventory for baking ingredients such as flour and sugar is also part of the responsibilities, ensuring orders are made within budgetary constraints. The Pastry Chef supervises and motivates pastry assistants and bakers, oversees staffing needs, recruits and trains personnel, and maintains a lean, organized cooking station that meets health and safety standards. Leadership in schedule creation, performance evaluation, and adherence to sanitation and safety regulations is also central to this position.

Job Duties

  • Prepare a wide variety of goods such as cakes, cookies, pies, bread, etc. following traditional and modern recipes
  • Create new and exciting desserts to renew our menus and engage the interest of customers
  • Decorate pastries using different icings, toppings, etc. to ensure the presentation will be beautiful and exciting
  • Monitor stocks for baking ingredients such as flour, sugar, etc. and make appropriate orders within budget
  • Check the quality of material and condition of equipment and devices used for cooking
  • Guide and motivate pastry assistants and bakers to work more efficiently
  • Identify staffing needs and help recruit and train personnel
  • Maintain a lean and orderly cooking station and adhere to health and safety standards
  • Recruit and train new kitchen employees to meet restaurant and kitchen standards
  • Create schedules for kitchen employees and evaluate their performance
  • Adhere to and implement sanitation regulations and safety regulations
