This particular role is a front-line Pastry Cook position reporting directly to the Executive Pastry Chef. It offers an excellent opportunity for culinary professionals passionate about pastry arts to develop their skills within a high-end resort setting. The position focuses on executing daily operational duties related to pastry production and bakery management. The Pastry Cook will learn to prepare and produce high-quality baked goods according to well-defined recipes and operational standards. As part of this role, the individual will adhere strictly to all food safety regulations set forth by federal, state, and local authorities, incorporating Brush Creek Ranch's Food and Beverage Work and Labor Standards (WLW SOPs) protocols.
The role involves comprehensive responsibilities that include inspecting food freshness, proper storage of all ingredients and prepared items, maintaining food and labor costs, and assisting with supervision of the stewarding department. The Pastry Cook will be instrumental in ensuring that all recipes and portion controls are followed meticulously to maintain the high standards expected at Brush Creek Ranch. Additionally, this position demands a team-oriented mindset where the Pastry Cook helps foster a positive work environment marked by cooperation and mutual respect. There is also an emphasis on mentoring and career development of associates, aligning with Brush Creek Ranch’s culture of professional growth.
Candidates will have the opportunity to work with a creative and energetic team, enhancing their skills in chocolate work, bread making, baking techniques, and basic cooking competencies including sautéing, broiling, frying, and more. The role requires basic computer knowledge to handle operational tasks with programs like Excel, Word, Outlook, and TM1. Culinary education or apprenticeship is preferred but not mandatory, highlighting the ranch's commitment to training and developing talent. This position is physically demanding but also requires mental engagement, blending hands-on production with planning and quality control.

Job Requirements
- Culinary education or apprenticeship preferred but not mandatory
- ability to perform physically demanding tasks covering 75% physical work
- capacity to engage in 25% cerebral tasks involving planning and quality control
- compliance with all local health department and federal food safety regulations
- experience or willingness to learn food preparation and pastry production techniques
- adherence to Food and Beverage operational procedures
- willingness to work in a team-oriented, cooperative environment
Job Qualifications
- Culinary education or apprenticeship preferred but not mandatory
- basic computer skills including Excel, Word, Outlook, TM1
- knowledge of baking, chocolate work, and bread making
- proficient knife skills
- basic cooking techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, and breakfast cookery
- ability to follow recipes and food safety guidelines

Job Duties
- Learn and practice full job description and all job duties
- perform daily preparation and production of pastry and bakery items
- utilize all Food and Beverage WLW SOPs and adhere to local health and federal regulations
- inspect all received foods for freshness and proper specifications
- store all raw foods and prepared items according to mandated procedures
- follow all use records, recipes, and procedures for food preparation in line with HACCP standards
- maintain food and labor costs, schedule control, and elimination of overtime
- assist in supervising stewarding department and mentor for lateral or cook positions
- check food freshness and ensure all recipes and portion controls are followed
- monitor guest and corporate feedback scores and contribute positively
- foster cooperation and respect among coworkers
- mentor associates for career development and advancement
