The position available at Brush Creek Ranch is a front-line role reporting directly to the Executive Pastry Chef. This role offers an excellent opportunity for individuals passionate about pastry arts to develop and hone their skills in a dynamic and supportive setting. The pastry role involves learning to execute all daily operational duties, production guidelines, and pastry recipes under the guidance of experienced professionals. It includes participating in the daily preparation and production within the bakery and other food outlets, ensuring the highest quality output that meets the ranch's standards.

As a member of the culinary team, you will be expected to adhere to all Food and Beverage Work Level Requirements (WLW) Standard Operating Procedures (SOPs), local health department regulations, and federal food safety guidelines. Key responsibilities include inspecting all incoming food items for quality and freshness, properly storing raw and prepared foods according to established procedures, and following HACCP-compliant recipes and food preparation records. Attention to detail is critical in managing food and labor costs, maintaining schedule controls, and minimizing overtime, which contributes to the operational efficiency and profitability of the food service department.

The role also involves supervisory and mentorship duties, including helping to oversee the stewarding department and supporting team members’ career growth and development. You will be expected to actively engage with guest feedback, particularly corporate survey scores, aiming to positively influence these through the delivery of outstanding culinary experiences. Building a cooperative and respectful work environment is vital, as is mentoring all associates to encourage their professional advancement within the ranch.

This position demands creativity, energy, excellence, and effective oral communication skills. Competencies include baking, chocolate work, and bread preparation, along with comprehensive knowledge of cooking and preparation equipment. Essential skills incorporate knife proficiency, and basic cooking techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, pantry work, and breakfast cookery. Basic computer skills in Excel, Word, Outlook, and TM1 are also beneficial for record-keeping and scheduling tasks.

The ideal candidate possesses a culinary education or apprenticeship experience, though this is preferred and not mandatory, opening opportunities for passionate learners eager to grow.
