The position available at Brush Creek Ranch is for a frontline Pastry Cook who will report directly to the Executive Pastry Chef. This role is a hands-on opportunity to learn, execute, and master daily operational duties within the pastry kitchen, including the preparation and production processes aligned with the ranch’s high standards. The successful candidate will work closely with the kitchen team to uphold strict operational guidelines, including health department regulations, food safety standards, and internal procedures based on HACCP principles. A strong emphasis is placed on meticulous preparation, food quality inspection, and maintaining optimal ingredient freshness to ensure superior product outcomes.
In this position, the Pastry Cook will not only execute pastry recipes but will also be actively engaged in cost management strategies such as monitoring food and labor costs, adhering to assigned schedules, and supporting efforts to eliminate overtime. They will assist in supervising and mentoring stewarding staff, potentially guiding them towards culinary roles within the organization. This is a physically and mentally engaging role, with approximate work composition of 75% physical activity and 25% cerebral tasks. While culinary education or apprenticeship is preferred, it is not mandatory, offering a valuable opportunity for motivated individuals to grow and flourish in a highly supportive environment. Compensation for this role is competitive, offering up to $17.00 per hour plus a guaranteed 10% end-of-season bonus. - previous experience in a kitchen or food preparation environment helpful

Job Qualifications
- Culinary education or apprenticeship preferred but not mandatory
- knowledge of baking, chocolate work, bread making, and basic cooking skills including sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery
- proficiency in basic computer skills such as Excel, Word, Outlook, and TM1
- strong oral communication skills

Job Duties
- Learn and practice all job duties and daily preparation procedures in the pastry kitchen
- utilize all food and beverage standard operating procedures along with local health department and federal regulations
- inspect all foods received for freshness and proper specifications
- store all raw foods and prepared items following mandated safety procedures
- follow recipes, use records, and HACCP guidelines during food preparation
- maintain food cost control sheets and manage labor costs with schedule adherence and overtime elimination
- assist in supervising and mentoring the stewarding department for potential culinary or lateral career opportunities
- check freshness of ingredients regularly and ensure all recipes and portion controls are adhered to
- monitor guest corporate feedback scores and contribute positively to improve rankings
