The Pastry 2 role at PebbleBeach Company is a vital culinary position responsible for ensuring the highest quality preparation and presentation of fine pastries across all hotel outlets, banquets, special parties, and events hosted by the company. This role requires meticulous attention to detail, as it involves following recipe cards precisely to produce superior pastries and baked goods that meet the high standards expected by PBC and its guests. The Pastry 2 will work closely with the Pastry Chef or Supervisor to discuss daily production schedules and event-specific pastry requirements to maintain smooth operational flow and ensure freshness by rotating food in storage as needed. Responsibilities include cleaning cooking surfaces and equipment to adhere to hygiene standards, assisting in the attractive plating of desserts, and preparing mise en place for upcoming shifts. Compliance with all Pebble Beach Company safety and health policies is mandatory to maintain the company's commitment to workplace safety and excellence.
This role is ideally suited for candidates with a minimum of two years of pastry preparation experience in premier restaurants or resorts, where they have developed a strong understanding of ingredient handling and pastry tool operation. Food safety certification is compulsory, as is at least a high school diploma or its equivalent. Preferred qualifications include familiarity with pastry shop operations and ingredient ordering, as well as graduation from an accredited culinary program or completion of an apprenticeship.
