The role of Pastry 1 at Pebble Beach Company is a specialized position focused on ensuring the production of the highest quality pastries for all hotel outlets, banquets, special parties, and events. This role goes beyond routine baking by requiring meticulous attention to recipe adherence, precise preparation techniques, and the artistic presentation of fine pastries to uphold the Company's reputation for excellence. The Pastry 1 works under the guidance of the Pastry Chef or Supervisor, collaborating closely to understand daily schedules and event needs, ensuring timely and efficient pastry production. Responsibilities include managing mise en place, maintaining inventory freshness through proper rotation of ingredients, and justifying daily food orders to meet operational demands. This position also plays a critical role in maintaining the cleanliness of cooking surfaces and equipment to uphold strict food safety standards.

In addition to hands-on pastry preparation, the Pastry 1 is responsible for mentoring new Pastry 2 employees, helping them integrate into the pastry team by training them on organization and task responsibilities. The ability to assign tasks effectively with the approval of the Pastry Chef ensures smooth operation and high productivity within the pastry shop. This leadership component underscores the importance of strong communication skills and teamwork. The role requires a solid technical foundation in pastry arts, including knowledge of ingredients, baking techniques, and the operation of typical pastry tools and equipment. Candidates must bring a minimum of three years of experience preparing pastries in premier restaurant or resort settings, along with a high school diploma or equivalent and food safety certification.

Job Duties

  • Follow recipe cards exactly to prepare pastries and baked goods
  • discuss daily events and production schedule with the Pastry Chef or Supervisor
  • rotate food in coolers, dry storage and personal mise en place to ensure freshness and reduce waste
  • clean cooking surfaces and equipment
  • assist in plating up desserts/baked goods in pastry shop
  • set-up mise en place for the next day
  • train new Pastry 2 employees in their responsibility and organization of the pastry shop
  • assign tasks to the Pastry 2 employees with the approval of the Pastry Chef
  • contribute a list of needed items to the daily food order with the approval of the Pastry Chef
  • comply with all Pebble Beach Company safety and health policies and procedures
