The role of Pastry 1 at Pebble Beach Company is dedicated to ensuring the highest quality preparation and presentation of fine pastries across all lodge outlets, banquets, and special events. This position involves precision and dedication to culinary excellence, following exact recipe cards, maintaining the cleanliness of cooking surfaces and equipment, and collaborating closely with the pastry chef and fellow kitchen staff. The Pastry 1 is responsible for organizing food production schedules, ensuring freshness through proper rotation of ingredients, setting up mise en place for upcoming shifts, and training Pastry 2 employees under the supervision of the pastry chef. This role plays an important part in maintaining the standards of quality and consistency for which Pebble Beach culinary operations are celebrated.

This full-time position offers competitive pay ranging from $26.43 to $31.09 per hour, with benefits provided through the Unite Here Union including health insurance and retirement plans. Job Requirements

  • High school diploma or equivalent
  • five years kitchen experience including two years in equivalent position at a premier restaurant, resort or hotel
  • basic hot/cold food cooking knowledge
  • proficient knife skills
  • ability to work and know standards of quality and production in various outlets and banquets

Job Duties

  • Follow recipe cards exactly to prepare pastries and baked goods
  • discuss daily events and production schedule with the pastry chef
  • rotate food in coolers, dry storage and personal mise en place, to ensure freshness and reduce waste
  • clean cooking surface and equipment
  • assist in placing food in dish in pastry shop
  • set-up mise en place for the next day
  • help train new Pastry 2 employees in their responsibility and organization of the pastry shop
  • assign tasks to the Pastry 2 employees with the approval of pastry chef
  • contribute a list of needed items to the daily food order with the approval of the Pastry Chef
  • comply with all Pebble Beach Company safety, health and sanitation policies and procedures
