The role available is a Culinary Manager position, responsible for overseeing the kitchen and stewarding departments to ensure seamless production for banquet events. The Culinary Manager plays a pivotal role in the success of Legends Global's banquet services by managing all aspects of culinary operations. The role requires a leader who can order, receive, and prepare high-quality food items while maintaining strict control over food costs. The Culinary Manager is responsible for producing food according to Banquet Event Orders, developing event proposals and menus, and coordinating with multiple departments to facilitate smooth event execution. Oversight of kitchen cleanliness, equipment maintenance, and compliance with health department regulations is crucial to this position. The manager also recruits, trains, and supervises kitchen and stewarding staff, ensuring adherence to Serve Safe certification and HACCP standards. This role demands advanced communication skills, creativity in food presentation, strong organizational abilities, and a results-oriented mindset to meet budgetary and production objectives. The Culinary Manager must maintain a health department score of 90 or higher and demonstrate flexibility in handling the physical demands of the job, including standing for long hours during events and moving throughout the facility. This position is ideal for an experienced culinary professional with at least eight years of banquet facility experience and a passion for quality food production and team leadership. Job Duties

  • Ordering, receiving and preparing all food items
  • Maintaining food costs and budget goals
  • Produce required product according to Banquet Event Orders for each event
  • Develop proposals for potential clients, to include tastings on larger plated events
  • Attend in-house event-related meetings and relays immediate changes with other departments
  • Develop menus and other projects
  • Maintaining all kitchen equipment cleanliness and annual maintenance
  • Hiring and training of all kitchen and stewarding staff to include 'Serve safe' and any Health department regulations
  • Maintain and manage culinary and stewarding personnel to meet labor and production objectives
  • Give oversight and direction to retail production and deliverability
  • Maintain a Health Department score of 90 or higher
