The Dinner Cook position is a vital role within Disneyland Resort's Signature Fine Dining culinary team. This role involves the preparation and cooking of a diverse range of dishes, from stocks and sauces to complex pastries and high-end specialty desserts, ensuring that each plate meets the resort’s exacting standards. Candidates will work closely with team members in a fast-paced environment, requiring adaptability, precision, and passion for culinary arts. Responsibilities include managing oven and grill temperatures, executing recipes with consistency, and maintaining strict food safety protocols, all while delivering a delightful dining experience to guests. The role requires a minimum of two years of culinary experience, particularly in high-volume production, or equivalent education and hands-on skills. At Disneyland Resort, Dinner Cooks enjoy a competitive pay rate of $28.50 per hour in California and have access to selective benefits related to healthcare and financial wellbeing. This position offers flexible scheduling but requires availability for early mornings, late nights, weekends, holidays, and special events to meet the demands of a 24/7 operation. Job Requirements

  • You must be at least 18 years of age to be considered for this role
  • minimum of 2 years of experience in culinary field with a focus on high volume production
  • culinary education degree or equivalent experience required with less than 2 years of experience in culinary field
  • strong communication and organizational skills
  • proven leadership and interpersonal skills with an ability to lead a team in a very fast-paced environment
  • adept at troubleshooting and can calmly handle difficult situations
  • passion for culinary and delighting our guests with food
  • proven ability to create, read, and understand recipes
  • understand the purpose of the knife and when to use it
  • exhibit a positive, friendly, and helpful attitude to our guests and fellow cast members
  • demonstrate excellent guest service skills and able to give appropriate service recovery
  • demonstrate passion and enthusiasm for working in the kitchen
  • proven knowledge of culinary techniques and terminology
  • food safety certification or equivalent
  • ability to work with technology including plate costing buffet system, CAFE system, KDS, Workbrain
  • must be flexible and able to work a variety of shifts including days, nights, weekends, holidays and special events

  • vocational school training or high school certification preferred
  • culinary education degree, certification from CIA, or equivalent preferred
  • basic wine knowledge preferred

Job Duties

  • Prepare, season, and cook stocks, soups, sauces, meats, vegetables, desserts, and other foodstuffs
  • read menus to estimate food requirements such as procedures and pars
  • adjust thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles
  • measure and mix ingredients according to recipes using a variety of kitchen utensils and equipment
  • perform line cook and pantry skills including roasting, baking, and broiling meats, fish, vegetables, and other foods
  • add seasoning to foods during mixing or cooking according to taste
  • formulate and prepare complex recipes including bakers/pastry recipes and high-end specialty desserts
  • operate all kitchen equipment including adjusting thermostat controls
  • maintain standards and specifications related to food preparation and food handling daily
  • uphold food safety and sanitation guidelines including HACCP procedures
  • check and maintain proper temperatures throughout preparation, cooling, holding, and serving of food items
  • observe, test, and ensure food is cooked and plated to proper standards
  • clean kitchen equipment
  • handle special dietary requests and work with guests requiring special requests due to dietary concerns
