The Signature Fine Dining/Demi Chef role at Disneyland Resort is a dynamic, fast-paced position that invites culinary artists, visionaries, and storytellers to join their esteemed kitchen team. In this role, you will engage in a variety of cooking techniques, including braising, baking, roasting, and high-level skillet and sauté work. You will be responsible for preparing sauces "a la minute" with advanced techniques, creating confits, compotes, and seasoning blends, as well as handling seafood and meats with precision. Your role will involve interacting with other kitchen staff and guests to discuss menu item preparation, maintaining proper food safety and sanitation standards, and ensuring that all food items are cooked and presented flawlessly.

This position also demands flexibility and a high level of professionalism as the resort operates 24/7 year-round, with shifts potentially starting early in the morning or ending in the early hours of the following day. The pay rate for this role in California is $30.50 per hour. Moreover, cast members may be eligible for select benefits including medical and financial options, depending on their level and position.   • Must be at least 18 years of age
  • Minimum of 2 years experience in culinary field with focus on high volume production
  • Culinary education degree or equivalent experience required if less than 2 years culinary field experience
  • Strong communication and organizational skills
  • Proven leadership and interpersonal skills
  • Ability to troubleshoot and handle difficult situations calmly
  • Passion for culinary and delighting guests
  • Proven ability to create, read, and understand recipes
  • Understand purpose and use of the knife
  • Positive, friendly, and helpful attitude
  • Excellent guest service skills with service recovery ability
  • Enthusiasm for kitchen work
  • Proven culinary techniques and terminology knowledge
  • Food Safety Certification or equivalent
  • Ability to work with technology including plate costing buffet system, CAFE system, KDS, Workbrain

Job Duties

  • Use cooking techniques such as braising, baking, roasting, and high-level skillet/sauté work
  • Inventory product, read menus (BEOs, Restaurant Orders), and estimate food requirements to create production plans
  • Prepare sauces "a la minute" using advanced sauce preparation techniques
  • Prepare confits, compotes, and create seasonings, cures, and rubs
  • Bone and clean shellfish, cut, trim, or grind meats, fish, or poultry
  • Present and discuss menu item preparation with dinner cooks, order/grill cooks, and guests
  • Operate kitchen equipment, including adjusting thermostat controls
  • Maintain standards and specifications related to food preparation and food handling
  • Uphold food safety and sanitation guidelines and HACCP procedures
  • Check and maintain proper food temperatures throughout preparation, cooling, holding, and serving
  • Ensure food is cooked and plated to proper standards
  • Clean kitchen equipment
  • Handle special dietary requests and work with guests requiring special dietary accommodations
