  • Minimum of 2 years culinary experience or culinary education degree with equivalent experience

Job Duties

  • Use cooking techniques such as braising, baking, roasting, and high-level skillet work
  • Inventory product, read menus, and estimate food requirements to create production plans
  • Prepare sauces using advanced techniques
  • Prepare confits, compotes, and create seasonings, cures, and rubs
  • Bone and clean shellfish, cut, trim, or grind meats, fish, or poultry
  • Present and discuss menu item preparation with kitchen teams and guests
  • Operate and adjust kitchen equipment including ovens, broilers, grills, and steam kettles
  • Maintain food preparation and handling standards daily
  • Uphold food safety and sanitation guidelines including HACCP procedures
  • Check and maintain proper temperatures during preparation and serving
  • Observe and ensure food is cooked and plated to standards
  • Clean kitchen equipment
  • Handle special dietary requests and work with guests with dietary concerns
