The PM Lounge (PML) is a distinguished dining establishment known for its commitment to delivering high-quality culinary experiences to its members and guests. As a vital component of PML's kitchen team, the Pantry Cook holds a specialized and essential role that centers on the preparation of cold food items, including salads, cold appetizers, and both hot and cold desserts. This position demands a thorough understanding of food preparation techniques, timing, recipe adherence, sanitation standards, and presentation artistry to ensure the creation of dishes that meet the restaurant's rigorous specifications and quality benchmarks. The Pantry Cook is responsible not only for the preparation of delectable cold dishes but also for maintaining a clean and organized workstation that supports efficiency and safety throughout the kitchen.

The role requires strict adherence to food safety and hygiene protocols, commencing from personal upkeep to station set-up, proper storage, and cleaning schedules. The Pantry Cook collaborates closely with other kitchen personnel including broiler cooks, side cooks, and kitchen management. This teamwork ensures that food products are prepared and ready for service in a seamless and timely manner, contributing to an excellent dining experience for PML's guests. The Pantry Cook frequently monitors inventory levels of food items, garnishes, and equipment to guarantee uninterrupted service flow, reporting any discrepancies promptly to the Chef.

Physically demanding, this position entails lifting up to 50 pounds, frequent movements such as bending, kneeling, and squatting, and working in environments subject to temperature extremes and noise. Job Qualifications

Job Duties

  • Report to work on time and be on the pantry station as scheduled
  • maintain uniform cleanliness and adhere to PML uniform standards
  • practice positive personal hygiene habits during all shifts
  • set up the pantry station with all necessary food items, equipment, and supplies according to the Pantry Station Checklist
  • report any problems or discrepancies to the Chef promptly
  • assist kitchen personnel in food preparation and sidework
  • prepare all food products according to PML recipe cards and standards
  • ensure all food is cooked and presented according to PML specifications and quality standards
  • check the par and stock levels of all pantry ingredients and supplies before shifts
  • prepare and portion salads, appetizers, and desserts while maintaining quality and presentation
  • coordinate with broiler and side cooks to ensure timely food preparation for service
  • rotate and restock pantry items throughout the shift
  • uphold sanitation, cleanliness, and food safety for all work areas
  • follow all safety guidelines and report unsafe conditions or accidents immediately
  • complete all station closing duties at the end of shifts
  • assist Kitchen Manager and kitchen staff in closing and cleaning duties
