Shade: Eatery at Higgins Beach Inn, located in Scarborough, Maine, is a scenic and vibrant dining establishment part of the Migis Hotel Group. Known for its fresh and high-quality seafood offerings, Shade provides patrons with a unique and memorable culinary experience right on the coast. Job Requirements

  • Must be eligible to work in the United States
  • previous cold-line experience is a bonus but not required
  • ability to safely handle knives and kitchen equipment
  • ability to lift up to 60 pounds safely
  • strong manual dexterity and bilateral fine manipulation of hands
  • ability to work in limited and sometimes uneven spaces
  • ability to communicate effectively with guests and team members
  • must comply with food safety and sanitation standards
  • physical stamina to stand for entire shifts and work in extreme indoor and outdoor temperatures
  • must be able to follow verbal and written instructions
  • willingness to work varying shifts including weekends and holidays

Job Qualifications

  • Previous experience as a line cook in a similar property
  • ability to communicate in English both orally and written
  • ability to understand verbal directions, menus, recipes, labels, and safety signage
  • ability to work under pressure and manage stressful situations
  • capability to perform frequent walking, bending, stooping, reaching, pushing, lifting, manual dexterity, and repetitive motions
  • experience working in extreme temperature conditions
  • flexibility to work varied schedules including evenings, weekends, and holidays

Job Duties

  • Provide fast, accurate shucking of oysters
  • hold shellfish firmly and use shucking knife to open shells at the hinge
  • cut shellfish from shell ensuring oyster liquor stays in shell
  • serve oysters with appropriate garnishes
  • prepare dessert and raw bar items
  • assist kitchen manager and kitchen staff with food preparation
  • rotate oysters daily placing oldest on top
  • safely operate kitchen equipment including ovens, stoves, dishwashers, slicers, steamers, mixers, and chef’s knives
  • maintain food safety, workstation, personal cleanliness, and sanitation standards
  • report broken equipment or unsafe conditions
  • manually handle and lift product up to 60 pounds
  • maintain bilateral fine manipulation of hands for repetitive tasks
  • work in limited space for entire shift
  • protect property assets
