The position of Overnight Kitchen Cleaner is essential within the hotel's food and beverage department. Reporting directly to the Executive Chef, the Overnight Kitchen Cleaner is responsible for heavy-duty cleaning tasks performed during overnight shifts, ensuring that the kitchen and back-of-house areas are sanitized, safe, and ready for daily operations. This role is vital to maintaining health and safety standards in the kitchen by conducting deep cleaning activities that include cleaning ovens, vents, floors, walls, and all kitchen equipment thoroughly. The Overnight Kitchen Cleaner works during overnight hours when the kitchen is not in full operation, allowing for comprehensive sanitation and preparation of kitchen spaces.
The role demands physical fitness and stamina, as the duties involve standing for long hours, lifting heavy items up to 70 pounds, and conducting rigorous cleaning tasks. Job Requirements
- Must be physically fit for continuous standing, walking, twisting, bending, pushing, pulling, reaching and kneeling
- Ability to lift and carry up to 50 pounds regularly and occasionally up to 70 pounds
- Availability to work overnight shifts
- Must be punctual and reliable
- Ability to follow exact instructions
- Willingness to work weekends and holidays
Job Qualifications
- High school diploma or equivalent preferred
- Prior experience in commercial kitchen cleaning or related cleaning roles is an asset
- Ability to follow detailed instructions and safety protocols
- Physical fitness suitable for manual labor
- Familiarity with cleaning products and equipment is beneficial
- Good interpersonal skills for effective teamwork
- Willingness to work overnight shifts, weekends and holidays
Job Duties
- Help maintain safety in the kitchen by clearing spills promptly, keeping all kitchen equipment, oven vents, all floors, walls, and cook surfaces thoroughly clean
- Prepare ovens, sinks and other dirty restaurant equipment for cleaning
- Use ice, water and cleaning solvent in cleaning of restaurant kitchen equipment
- Empty, wash and return trash bins when 3/4 full
- Dispose of all trash and recyclable materials appropriately
- Clean and sanitize all kitchen areas and operate dishwashing machine safely
- Perform general overall cleaning of all kitchens and back of house areas to prepare for next day
- Sweep and mop all walk-in refrigerators nightly
- Follow deep cleaning project instructions with urgency as required
- Clean and wipe down tables and chairs in employee cafeteria
- Learn usage and safety instructions of all cleaning products
- Follow kitchen cleaning schedule throughout the night
- Assist management in maintaining a clean and organized building
- Maintain organization of all smallwares in kitchens
- Conduct proper cleaning and sanitation of all kitchen equipment and food production/storage areas
- Maintain cleanliness of floors, mats, ovens, vents and kitchen equipment
- Comply with standard operating procedures and policies of Mystic Marriott Hotel & Spa
- Mop, sweep, strip, grind and polish floors
- Maintain grease traps nightly
- Vacuum carpets
- Clean public restrooms as required
- Smile and be friendly when interacting with co-workers, guests and staff
- Follow all safety and operating procedures
- Ask supervisor or employees for help when needed
- Be open to coaching and feedback
- Work weekends and holidays
