The Pastry Cook position at Four Seasons Hotel Seattle is an exciting opportunity for culinary professionals passionate about fine pastry arts. This on-call role requires a skilled culinary artisan who is enthusiastic, meticulous, and dedicated to producing high-quality pastries and desserts that meet the luxury brand’s exacting standards. Working as part of a dynamic culinary team, the Pastry Cook will prepare an array of sweet items including pastries, cakes, ice creams, sorbets, fruit compotes, and chocolates, ensuring every creation upholds the consistency, presentation, and taste standards expected by guests and banquet events.

As a key contributor to the kitchen operation, the Pastry Cook plays a crucial role in mise en place setup for all meal services—breakfast, lunch, and dinner—and maintains strict adherence to food safety and sanitation protocols. Responsibilities include operating and maintaining various kitchen equipment, managing inventory and food rotation, controlling food waste, and collaborating effectively with teammates to maintain a harmonious work environment. The role demands a high level of attention to detail, problem-solving skills, and a genuine passion for luxury hospitality and culinary excellence.

Job Requirements

  • High school diploma or equivalent
  • 2-3 years pastry cook experience in fine dining or luxury hospitality
  • valid WA State Food Handler's Card
  • ability to stand for extended periods
  • ability to work flexible schedules including weekends and holidays
  • strong communication and teamwork skills
  • commitment to food safety and sanitation

Job Duties

  • Prepare pastry items according to guest orders of consistent quality following recipe cards
  • complete mis en place and set-up station for breakfast, lunch, and/or dinner service
  • prepare sweet items, pastries, cakes, ice creams, sorbets, fruit compotes, chocolates and show pieces according to guest orders and banquet event orders
  • start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs
  • operate, maintain and properly clean kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
  • date all food containers and rotate as per policies ensuring perishables are kept at proper temperatures
  • comply with Four Seasons' Category One and Category Two Work Rules and Standards of Conduct
  • work harmoniously and professionally with co-workers and supervisors and actively participate in creating a teamwork environment
