Job Description

The Department of Corrections Reentry Division is currently seeking a dedicated On-Call Cook 2 to join the team at the Bellingham Reentry Center in Bellingham, Washington. This position plays a crucial role in supporting the agency’s mission by preparing and serving nutritious, quality meals to residents in a timely manner that aligns with certified meal plans designed to meet daily nutritional requirements. The Cook 2 is an in-training position, with the potential for appointment at Cook 1 or Cook 2 level depending on qualifications and experience. This recruitment may be used not only to fill current vacancies but also future permanent and non-permanent openings.
In this role, the Cook 2 will contribute directly to the Reentry Division’s goal of helping individuals successfully transition back into the community by providing residents with healthy and safe food necessary for their well-being during rehabilitation. The position requires expertise in large-scale food preparation, adherence to state and federal food safety regulations, and the ability to manage inventory, ordering, and proper storage of food supplies. Additionally, the Cook 2 interacts with the resident population in a way that models positive, professional behavior and maintains the highest standards of hygiene and safety within the kitchen environment.

Job Requirements
- Maintain regular and reliable attendance
- Complete a felony disclosure form and submit to a criminal background check
- Successfully complete employee orientation and mandatory training
- Provide physical residential address and home telephone number
- Comply with Department policies and Collective Bargaining Agreements
- Submit to drug testing
Job Qualifications
- Two years of cooking experience in large-scale food service or culinary operation or completion of a large-scale cooking course as a substitute for one year of experience
- Or one year as a Cook 1 in State service
- Current food handler permit
- Ability to cook a variety of foods
- Ability to follow written and oral instructions
- Ability to write clearly, factually, and concisely
- Ability to read, understand, estimate quantities, and follow recipes with minimal waste
- Ability to communicate effectively verbally
- Ability to schedule and organize daily work
- Ability to operate and demonstrate safe handling of kitchen equipment
- Ability to role model appropriate behavior to residents
- Ability to supervise, coach, train, and provide constructive feedback to residents
- Knowledge of a variety of foods
- Knowledge of alternate food preparation methods such as cook/chill and cook/freeze
- Knowledge of basic arithmetic
- Knowledge of food service practices, preparation, and production methods
- Knowledge of food service record keeping
- Knowledge of HACCP protocols and tools
- Understanding of weights and measures
- Understanding of rethermalization of food process and procedures
Job Duties
- Participate in the preparation and service of all food on a shift
- Perform mathematical calculations by converting recipes to determine appropriate food quantities
- Ensure adherence to portion control protocols
- Check food quality and quantity during and after preparation
- Understand and apply rethermalization of food procedures
- Practice progressive cooking techniques to control quality and reduce waste
- Follow safety practices to prevent hazards and accidents
- Prepare special diets as required for medical or religious reasons
- Maintain personal hygiene and cleanliness of work surfaces and equipment
- Maintain and track knife and tool inventory
- Perform ordering, inventory, storage, use, and reporting tasks
- Maintain accurate food inventories and ensure stock rotation
- Receive, store, and distribute food products according to standards
- Receive, store, and use chemicals and cleaning supplies appropriately
- Prepare and submit work and equipment repair orders
- Execute and maintain tool control processes as per DOC policy
- Maintain key control according to DOC policy
- Ensure safe handling and operation of kitchen equipment
- Perform other duties as assigned
