The Nutrition Services Chef role at Vi at Lakeside Village is a pivotal position that supports the Executive Chef in managing culinary operations within the Care Center. This position involves preparing nutritious, texture-modified meals such as diabetic-friendly, low-sodium, and pureed options customized per nutritional orders. The Nutrition Services Chef will work closely with the Nutrition Services Manager to ensure dietary compliance and contribute hands-on to food preparation, plating, and service. Oversight of safety protocols including Hazard Analysis Critical Control Points (HACCP) and regulatory compliance is critical to this role. Managing kitchen staff involves responsibilities like training, scheduling, and performance management, which are essential to maintaining culinary excellence.
The ideal candidate brings a clear understanding of clinical nutrition, back-of-house food and beverage operations experience, and holds state certification in food service sanitation. Possession or willingness to obtain Certified Dietary Manager credentials is required. Job Requirements
- Associate's Degree in Nutrition or certificate from accredited program
- Minimum three years of clinical nutrition experience
- State certification in food service sanitation required
- Certified Dietary Manager certification or commitment to obtain within six months
- Valid driver's license where applicable
- Compliance with Florida's Care Provider Background Screening
- Ability to manage and lead kitchen staff effectively
Job Qualifications
- Associate's Degree in Nutrition from an approved program or certificate from an approved Dietary Managers course
- Minimum of 3 years in clinical nutrition
- State certification in food service sanitation
- Certified Dietary Manager or willingness to obtain certification within six months
- Valid driver's license where applicable
- Bachelor's Degree in nutrition preferred
- Back-of-the-house food and beverage experience preferred
Job Duties
- Prepares high-quality nutritious meals tailored to therapeutic and texture-modified diets
- Collaborates with Nutrition Services Manager to ensure nutritional adequacy and compliance with dietary orders
- Participates in food preparation plating and service in accordance with menus and resident care plans
- Ensures sanitation and HACCP standards compliance
- Manages kitchen staff including staffing training scheduling and performance oversight
- Ensures accuracy consistency and standardization of ingredients recipes and menus
- Works with Nutrition Services Manager to follow nutritional assessments and provide appropriate meals
