The Nutritional Coordinator is responsible for overseeing the entire nutritional operations within Red Caboose, including the planning, purchasing, preparation, and distribution of food in the kitchen. This full-time role is based in Madison, WI, and offers a competitive hourly wage ranging from $17.75 to $18.45. The position works collaboratively with another Nutrition Coordinator to supervise and train assistant cooks, volunteers, and substitutes, ensuring smooth kitchen operations at all times. The person in this role must maintain impeccable standards in food safety, sanitation, and regulatory compliance, all while addressing the individual dietary needs of children, including cultural considerations and special diets. This includes preparing nutritious, varied meals and snacks in line with USDA and CACFP guidelines and accommodating special diets where necessary, including providing meals for children with disabilities.

In addition to food preparation, the Nutritional Coordinator is tasked with detailed record-keeping including menu planning, food purchase records, and compliance documentation. The role demands excellent organizational skills for planning weekly menus in advance and ensuring efficient use of leftovers and food supplies to stay within budgetary limits. The Nutritional Coordinator also ensures cleanliness and safety in the kitchen environment according to local health codes and Wisconsin licensing standards. The role involves physical tasks such as lifting up to 50 pounds and requires reliable transportation to deliver food to classrooms and SAP sites.

Job Requirements

  • must have reliable access to a vehicle and a valid driver’s license

Job Qualifications

Job Duties

  • Plan and record one week menus for breakfast, lunch, and snacks in advance
  • post menus in kitchen and hallway
  • send menus to SAP sites
  • make copies for parents as requested
  • purchase and order food and kitchen supplies weekly within budgetary constraints
  • use food, including leftovers, efficiently and timely
  • provide easy menu and instructions for substitutes in case of absence
  • maintain file of recipes
  • recognize cultural differences in planning the food program
  • keep all CACFP records including food amounts used and number served
  • keep records of purchases and expenditures
  • prepare nutritious, appetizing, and varied breakfasts, lunches, and snacks
  • prepare vegetarian alternatives when needed
  • accommodate special diets when possible
  • provide food for children with disabilities as required by CACFP
  • provide opportunities and ingredients for children’s cooking projects
  • store dry goods and perishables properly according to safety and sanitation standards
  • keep kitchen clean, orderly, and safe according to Wisconsin and local health codes
  • comply with regulatory agencies including Wisconsin Licensing and City of Madison Accreditation
  • wash and sanitize dishes, utensils, pots, pans, and serving equipment
  • clean and sanitize food preparation areas
  • maintain refrigeration, ventilation, and kitchen equipment
  • document required food temperatures during transportation
  • record refrigerator and freezer temperatures daily
  • participate in hiring, supervising, and training assistant cooks
  • supervise and train kitchen volunteers and substitutes
  • transport food to center classrooms and SAP sites
  • maintain knowledge of food handling, safety, and sanitation standards
  • participate in annual center classroom set-up day
  • interact respectfully with staff, children, and parents
  • perform other duties within scope of job description as directed by supervisor
