The Nixtamalero role at Vallarta Supermarkets is a specialized position within the Tortillería department responsible for producing traditional corn and flour tortillas from start to finish using authentic methods. This role is essential in maintaining Vallarta's high standards for quality, consistency, and food safety. The Nixtamalero will prepare masa, cook and grind nixtamal, fry tortillas, and follow precise recipes to ensure each product meets the company’s strict quality controls. Beyond production, the Nixtamalero also engages in stocking, rotating, and merchandising tortilla products to maintain freshness and appealing presentation. Customer service is a key element, requiring the Nixtamalero to greet and assist customers with their tortilla orders in a friendly and professional manner.

This role demands physical endurance, as employees stand and walk for long periods, frequently bend, squat, and lift materials weighing up to 50 lbs. Working safely around cooking equipment and in a fast-paced retail environment is critical. The role also involves maintaining cleanliness and sanitation of equipment and work areas, adhering to health code regulations and Vallarta’s Tortillería Safety Program. Team collaboration is important, with assistance given to coworkers and participation in training new employees under the Tortillería manager's supervision.

Job Duties

  • Smile, greet, and assist customers with tortilla orders, ensuring friendly and professional service
  • Prepare masa, cook and grind nixtamal, fry tortilla products, and follow company recipes for consistency in quality and weight
  • Clean nixtamal cooking tanks, equipment, and work areas using “clean as you go” principles
  • Rotate, replenish, and display tortilla products attractively, ensuring freshness and accurate signage
  • Package flour and corn tortillas, transport products to/from storage, and follow schematics provided by the manager
  • Follow health code regulations, food safety practices, and Vallarta’s Tortillería Safety Program
  • Assist coworkers, support training and apprenticeship of new employees, and maintain open communication with the Tortillería Manager
  • Perform additional tasks as directed to support department operations and customer satisfaction
