As a Dinner Cook at Napa Rose, you will be an integral part of a dynamic culinary team that prides itself on artistic expression and culinary excellence. You will be responsible for the preparation, seasoning, and cooking of a wide range of dishes including stocks, sauces, meats, vegetables, desserts, and more. Utilizing various kitchen equipment such as blenders, mixers, and slicers, you will prepare complex recipes that require precision and creativity. The position also demands an understanding of food safety protocols including HACCP procedures to maintain the highest standards of cleanliness and food quality. Job Requirements

  • You must be at least 18 years of age to be considered for this role
  • Minimum of 2 years of experience in culinary field with a focus on high volume production
  • Culinary education degree or equivalent experience required with less than 2 years of experience in culinary field
  • Proficient knife skills
  • Proven knowledge of culinary techniques and terminology
  • Proven ability to read and understand recipes
  • Organizational skills
  • Ability to multitask and adapt to production requirements in a fast-paced team environment
  • Speed, accuracy, and efficiency are required and ability to work well under pressure
  • Must be flexible and able to work a variety of shifts, including days, nights, weekends, holidays, and special events

Job Duties

  • Prepare, season, and cook stocks, soups, sauces, meats, vegetables, desserts, and other foodstuffs for consumption in hotels and restaurants
  • Read menus to estimate food requirements and procure it from storage
  • Adjust thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles
  • Measure and mix ingredients according to recipes, using a variety of kitchen utensils and equipment, such as blenders, mixers, grinders, slicers, and tenderizers to prepare soups, salads, gravies, desserts, sauces, and casseroles
  • Bake, roast, broil, and steam meats, fish, vegetables, and other foods
  • Add seasoning to foods during mixing or cooking according to personal judgment and experience
  • Observe and test food being cooked by tasting, smelling, and piercing with a fork to determine that it is cooked
  • Responsible for ensuring food is cooked to proper standards
  • Clean kitchen equipment and practice all HACCP (Hazard Analysis and Critical Control Points) procedures
