The Chef de Cuisine role at The Mission Inn Hotel & Spa presents a unique opportunity for culinary professionals to lead daily culinary operations within one of its fine dining or specialty restaurant outlets. This position is pivotal in maintaining the reputation of the hotel by ensuring top-notch food quality, extraordinary presentation, and adherence to food safety and sanitation standards. The successful candidate will play a hands-on role as a leader and mentor to kitchen staff, supervising kitchen operations, managing food and labor costs, and supporting the Executive Chef in crafting seasonal menus and managing special event cuisine.
As the Chef de Cuisine, you will be entrusted with managing inventory, minimizing waste, and optimizing kitchen productivity while maintaining a clean and safe working environment compliant with all health regulations. Collaboration with Food & Beverage leadership is also a key aspect of this role, focusing on enhancing guest satisfaction and operational excellence. Moreover, because The Mission Inn hosts a variety of special occasions, your role will often extend to supporting weddings, banquets, holiday functions, and other events, demanding flexibility and a commitment to excellence.
This role offers competitive compensation ranging from $75,000 to $90,000 annually and includes access to Pyramid Global Hospitality's extensive benefit offerings. Job Requirements
- Ability to stand and walk for extended periods
- Frequently lift and carry up to 50 pounds
- Ability to work in hot cold and humid kitchen environments
- Manual dexterity to operate kitchen equipment safely
Job Qualifications
- Culinary degree or equivalent professional culinary training preferred
- Minimum of 3-5 years of progressive culinary leadership experience preferably in a luxury hotel resort or fine dining environment
- Strong knowledge of classical and contemporary cooking techniques
- Proven leadership coaching and team-building skills
- Experience with menu development food costing inventory management and budgeting
- Knowledge of HACCP principles and food safety regulations
- Excellent organizational communication and problem-solving abilities
- Ability to thrive in a fast-paced high-volume environment
- Flexible schedule including evenings weekends holidays and special events
Job Duties
- Lead and supervise all kitchen operations ensuring consistency quality and efficiency
- Prepare and present high-quality dishes that meet culinary standards
- Train mentor schedule and evaluate kitchen team members to promote professional growth
- Assist in developing seasonal menus daily specials and banquet offerings
- Monitor food preparation to ensure recipes portion control and presentation standards
- Manage food and labor costs by controlling inventory minimizing waste and optimizing productivity
- Order food beverages and kitchen supplies while maintaining appropriate inventory levels
- Ensure compliance with all health regulations including food safety and sanitation standards
- Maintain a clean organized and safe kitchen environment
- Collaborate with Executive Chef and Food & Beverage leadership to enhance guest satisfaction and operational excellence
- Address guest concerns related to food quality professionally and timely
- Support special events holiday functions weddings banquets and other culinary operations
- Maintain accurate records for inventory food costs and kitchen performance
