Fontainebleau Miami Beach is a legendary luxury resort located on the oceanfront of Collins Avenue in the heart of Miami's famous Millionaire's Row. We are currently seeking dedicated individuals to join our culinary team, contributing to the daily operations that uphold Fontainebleau's high standards of excellence. The role focuses on supporting the Chef de Partie in preparing and maintaining food quality in alignment with stringent safety and sanitation protocols. As part of our kitchen team, you will be involved in critical food preparation activities, ensuring ingredients are accurately measured, washed, and prepped for the cooking process. The job demands attention to detail and adherence to the Hazard Analysis Critical Control Point (HACCP) program to maintain the highest food safety standards throughout all operations. Responsibilities include sanitation of kitchen equipment, organization and maintenance of workstations, and proper handling and storage of food products. Candidates will benefit from experience in high volume, fast-paced culinary environments, particularly those who have gone through accredited culinary programs or apprenticeships. Exceptional teamwork skills and the ability to cultivate effective working relationships with management, staff, and guests are fundamental to success in this role.

Job Requirements

  • High school education or equivalent
  • culinary training or accredited apprenticeship program preferred
  • relevant experience in a high quality, high volume, and multi-unit operations preferred
  • knowledge of statutory requirements regarding health and safety, sanitation, proper chemical usage, fire procedures, and HACCP
  • knowledge of all kitchen equipment operations
  • ability to establish and maintain an effective working relationship with management, staff, and guests

Job Duties

  • Prepare mise-en-place in advance of cooking process: review recipe
  • check and measure necessary ingredients
  • wash, chop, and place ingredients in individual bowls
  • retrieve and prepare for use all necessary equipment
  • prepare and handle fruits, vegetables, salads, and fish according to the Hazard Analysis Critical Control Point (HACCP) program guidelines
  • check and clean refrigerators, trolleys, utensils, and kitchen equipment on a daily basis
  • maintain the specific kitchen area clean and hygienic
  • pick up products from stores in accordance with HACCP guidelines and Company policies
  • perform other related duties as assigned
