- Ability to cut meat to customer specifications with a high yielding level of skill
- willingness to perform heavy lifting
- capability to work in refrigerated processing and warehouse environments
- physical ability to touch, feel, and manipulate fingers and limbs to operate processing equipment
- ability to smell for wholesomeness and spoilage detection
- adaptability to a cold and wet working environment with exposure to moving machinery and sharp surfaces

Job Duties
- Able to see deficiencies in raw materials
- ability to identify the product by proper name at sight as well as the ability to trim all loins
- ability to label and identify sub primal cuts after trimming to ensure product is ready for next step in processing
- knowledge of basic cuts and trim that prep table is responsible for producing (stew, roasts, PTRs, etc.)
- some heavy lifting required
