In this role, the candidate will utilize their expertise in identifying various meat cuts by sight and labeling these appropriately to maintain the integrity of the production process. Knowledge of different primal and sub-primal cuts such as loins, stews, roasts, and PTRs is essential. The job involves physical demands including some heavy lifting and working in refrigerated environments where the employee must be mindful of moving machinery and sharp surfaces commonly found in the processing and warehouse areas.

The role requires a commitment to quality and safety standards, along with the ability to detect product deficiencies and potential spoilage using sensory skills like smell. Adaptability to a cold and wet work environment is necessary to ensure consistent performance. Job Duties

  • Able to see deficiencies in raw materials
  • ability to identify the product by proper name at sight as well as the ability to trim all loins
  • ability to label and identify sub primal cuts after trimming to ensure product is ready for next step in processing
  • knowledge of basic cuts and trim that prep table is responsible for producing (stew, roasts, PTRs, etc.)
  • some heavy lifting required
