The role of Cook II at McArthur's, a New American cuisine restaurant within the Arizona Biltmore, is a vital position that demands culinary skill, consistency, and teamwork. This full-time position requires flexibility to work afternoons, evenings, weekends, and holidays. The cook will handle intensive food production duties, focusing on meats, fish, poultry, sauces, stocks, and seasoning while maintaining high food quality standards and adherence to food safety protocols. Responsibilities include preparing food items according to standardized recipes to ensure consistency, inspecting ingredients, monitoring storage conditions, maintaining cleanliness and compliance with health regulations, managing inventory requisitions, and applying math skills for recipe accuracy. This position typically involves working grill and sauté stations serving an average of 150 covers per shift.

Candidates for this role should have a high school diploma or equivalent, with preferred completion of culinary school or apprenticeship programs. At least two years of professional cooking experience in fast-paced kitchens is required, ideally within the hotel/resort or luxury dining sector. Possession of a Maricopa County Food Handler Card is mandatory, while ServSafe certification is preferred. Job Duties

  • Prepare all food items according to standard recipes and/or as specified on guest check to ensure consistency of product to the guest
  • Visually inspect, select and use only food items ideal cooking, in preparation of all menu items
  • Maintain consistency and work as a team
  • Check and control the proper storage of product, monitoring age and condition of all food items to rotate and maintain highest quality
  • Keep all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations
  • Prepare daily requisitions for supplies and food items for production
  • Read and employ math skills to follow recipes
