The role of Chef Mixologist at Bellagio represents an exciting opportunity to join one of the most prestigious luxury destinations in the world. This position is designed for an innovative and motivated individual who will lead and elevate the bar and mixology program, crafting unique beverage experiences that reflect the elegance and excitement of Bellagio. The Chef Mixologist will oversee a high-performing team, ensuring operational excellence and delivering memorable guest service. Responsibilities include developing new drink menus that align with current food and beverage trends, maintaining the highest health and cleanliness standards, managing compliance training, and promoting the bar department through strategic marketing. This role demands creativity, precision, and a keen focus on financial performance while upholding MGM Resorts’ stringent quality and service standards. The Chef Mixologist will play a pivotal role in shaping the beverage atmosphere to enhance the guest experience, making every visit unforgettable. Job Requirements

  • Must be at least 21 years of age
  • Minimum 2 years of relevant experience in mixology or bar management
  • Bachelor’s degree from an accredited culinary institute or equivalent experience required
  • Previous experience managing unionized employees is preferred
  • Experience working in a high-volume luxury restaurant bar preferred
  • Able to maintain health and sanitation standards
  • Effective communication and leadership skills

Job Qualifications

  • Is 21+ years of age
  • 2+ years of prior relevant experience
  • Bachelor’s degree from an accredited culinary institute or equivalent experience
  • Previous experience managing employees under a collective bargaining agreement preferred
  • Previous experience working in a bar in a high-volume luxury restaurant preferred

Job Duties

  • Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, bar menus, rules and regulations for the bar staff
  • Owns department execution of F&B and/or company-wide initiatives and programs
  • Maintain the highest standards of health, sanitation and cleanliness within all areas of the bar
  • Responsible for completion of all company compliance training for staff
  • Review, create and develop new bar menu items and concepts to remain current with food trends and marketplace and is responsible for promoting bar/mixology department through marketing
  • Manages human resources responsibilities including creating a work environment that promotes teamwork, performance feedback, recognition, mutual respect and employee satisfaction
  • Interacts with internal/external guests to ensure satisfaction and product quality
  • Reacts to any feedback on guest complaints and takes appropriate action
  • Maintains excellent knowledge of property’s beverage products, menu items and equipment used to perform duties
