The Food & Beverage Manager at Great Wolf Lodge is a dynamic leadership role that involves overseeing multiple food and beverage operations within the lodge environment, including restaurants, bars, quick-serve outlets, and banquet services. Job Requirements

  • High school diploma or equivalent experience
  • Minimum of 1 year leadership experience in food & beverage
  • Flexibility in scheduling including nights, weekends and holidays
  • Experience driving business revenue, controlling costs, ensuring guest satisfaction and employee engagement
  • Demonstrated experience leading teams to achieve or exceed goals
  • Strong attention to detail and time management skills
  • Comprehensive knowledge of food and beverage preparation, service standards, guest relations and etiquette
  • Proficiency with hospitality software including Microsoft Office Suite, payroll systems, and POS
  • Successful completion of criminal background check and drug screen
  • Highly proficient in food safety and sanitation practices
  • Able to lift up to 30 lbs
  • Able to bend, stretch and twist
  • Able to stand for long periods of time

Job Qualifications

  • High school diploma or equivalent experience
  • Minimum of 1 year leadership experience in food & beverage
  • Experienced in business driving, revenue, cost control, guest satisfaction and employee engagement
  • Strong attention to detail and time management skills
  • Comprehensive knowledge of food and beverage preparation, service standards, guest relations and etiquette
  • Familiarity with hospitality software including Microsoft Office Suite, payroll systems and POS
  • Successful completion of criminal background check and drug screen
  • Highly proficient with food safety and sanitation practices
  • Bachelor's degree in hospitality, business or related field preferred
  • 2 years in a similar role preferred
  • Manager-level certification from nationally accredited food safety training preferred
  • Manager-level certification from alcohol awareness and safety training preferred
  • Effective communication and conflict resolution skills
  • Experience with kitchen and bar equipment maintenance
  • Prior management experience in hotel/resort industry preferred
  • Strong analytical skills
  • Experience in implementing safe work environment plans preferred

Job Duties

  • Oversees and takes ownership of daily functions of lodge restaurant, bar, quick service and banquet operations per brand guidelines
  • Assists F&B leadership in achieving operational objectives, strategic planning, problem-solving and audits
  • Participates in hiring, training, scheduling, coaching, and counseling of staff
  • Ensures compliance with Great Wolf University training courses
  • Supports frontline staff to anticipate and attend to guest needs for maximum satisfaction
  • Partners with F&B leaders to supervise preparation, presentation and timeliness of foods and beverages
  • Assists in peak demand times including guest-facing roles
  • Collaborates with Culinary and Purchasing Teams to maintain storeroom, cooler and freezer organization
  • Controls cost of goods sold through portion control and waste minimization
  • Enforces adherence to all food safety, sanitation, cleanliness and safety audits
  • Coordinates scheduling and payroll activities with HR
  • Monitors equipment operation and maintenance
  • Participates in inventory procedures
  • Conducts pre-shift meetings and service audits
  • Ensures compliance with safety inspections
