The Food & Beverage Manager at Great Wolf plays a pivotal leadership role within the lodge environment, overseeing multiple dining venues including restaurants, bars, quick-serve outlets, and banquet services. This role requires a proactive manager who can maintain brand standards related to food safety, sanitation, cleanliness, staff preparedness, and guest satisfaction, all while driving profitability and operational efficiency. The manager leads daily operations and ensures that all food and beverage outlets consistently meet high-quality standards, contributing to an exceptional guest experience. Responsibilities include managing staff schedules, training and coaching team members, monitoring inventory and ordering processes, and collaborating closely with culinary and purchasing departments to optimize food production and costs. By fostering collaboration among Food & Beverage leaders and supporting frontline staff, the manager helps create a welcoming and smoothly run dining experience for guests.

Job Requirements
- High school diploma or equivalent experience
- Minimum of 1+ years leadership experience in food and beverage
- Flexible scheduling including nights, weekends and holidays
- Ability to drive business results, control costs and improve guest satisfaction
- Experience leading teams to achieve goals
- Strong attention to detail and time management
- Knowledge of food and beverage preparation and service standards
- Familiarity with hospitality software
- Completion of background check and drug screen
- Proficiency in food safety and sanitation practices
Job Qualifications
- High school diploma or equivalent experience
- Minimum of 1+ years leadership experience in food and beverage, organizing a team for optimal customer service
- Experienced in driving business, revenue, controlling cost, guest satisfaction and employee engagement
- Demonstrated experience leading teams to achieve or exceed goals
- Strong attention to detail and time management skills
- Comprehensive knowledge of food and beverage preparation, service standards, guest relations and etiquette
- Familiarity with desktop and hospitality software including Microsoft Office Suite, payroll systems and POS
- Successful completion of criminal background check and drug screen
- Highly proficient with food safety and sanitation practices, rules and regulations
- Bachelor's degree in hospitality, business, or related field (desired)
- Preferably 2 years in a similar role (desired)
- Manager-level certification from nationally accredited food safety training program (desired)
- Manager-level certification from nationally accredited alcohol awareness and safety training program (desired)
- Effective communication and ability to resolve conflict
- Proven teamwork
- Training or experience with hands-on kitchen and bar equipment maintenance
- Prior management experience in hotel or resort industry
- Strong analytical skills to understand and react to key business indicators
- Experience developing and implementing safety and compliance plans
Job Duties
- Oversees daily functions of lodge restaurant, bar, quick serve, and banquet operations per brand guidelines and KPI goals
- Assists F&B leadership in achieving operational objectives, strategic planning, and quality standards implementation
- Participates in hiring, training, scheduling, coaching, and counseling of staff with enforcement of policies
- Ensures staff compliance with Great Wolf University training programs
- Supports frontline staff to meet guest needs for maximum satisfaction
- Partners with F&B leaders to supervise food preparation and presentation according to standards
- Assists in guest-facing roles during peak times
- Collaborates with Culinary and Purchasing teams on inventory and par level management
- Helps control cost of goods sold through portion control and waste minimization
- Maintains food safety, sanitation, cleanliness, and safety audit adherence
- Works with F&B leaders and HR on scheduling and payroll
- Monitors equipment, performs maintenance and calls for repairs
- Participates in inventory procedures to maintain budget and pars
- Conducts pre-shift meetings and service audits to ensure service quality
- Ensures compliance with safety inspections and standards
