Job Requirements

  • 3-5 years high volume and fast paced experience in kitchen operations
  • skilled in cooking, cost controls, management, crew training and development
  • standard food preparation and presentation
  • food, beverage and labor cost controls
  • ability to run all kitchen operations
  • working knowledge of Microsoft, Word, Excel and Access systems
  • POS knowledge
  • must be able to lift and/or move up to 75 lbs
  • high school diploma
  • sanitation and food handling certificates
  • working knowledge of kitchen and dishwashing procedures
  • knowledge of food and beverage costs, labor costs, and product cost
  • computer knowledge: Excel worksheets, databases, word processing, and Outlook
  • able to stand for long periods of time (10-12 hours)
  • able to tolerate extreme heat
  • able to work in a fast-paced environment

Job Duties

  • meet or exceed budgetary expectations
  • manage food and beverage costs
  • control labor costs
  • oversee operating accounts
  • monitor and maintain inventory bi-weekly
  • develop and implement menu engineering programs to project and monitor trends
  • assist and support kitchen staff and management as needed
  • ensure execution of corporate mandates and SOPs
  • prevent unapproved overtime on shifts
  • check labor daily in labor management system
  • perform opening and closing kitchen supervisory tasks
  • foster a positive and creative team environment
  • facilitate open communication with supervisors, staff, and management
  • ensure proper inter-departmental communication and organization
  • conduct staff evaluations and set performance goals
  • assure ongoing staff training
  • oversee evaluations and raise recommendations
  • maintain an open door policy with staff
  • make information-based decisions and efficient follow-ups
  • manage operational supplies and ensure all staff have necessary equipment
  • train and sign off staff on equipment
  • maintain all kitchen equipment
  • plan and carry out events
  • maintain housekeeping standards per local health codes
  • update and use tools consistently
  • ensure food standards are met and approved
  • recommend new menu items quarterly
  • report and resolve guest and crew feedback
  • guarantee 100% recipe adherence
