The Executive Sous Chef role at Little Rey is a critical position within Rocket Farm Restaurants' culinary team, charged with overseeing the daily operations of the kitchen across various domains such as production, prep, stewarding, purchasing, and managing private events. The Executive Sous Chef will function as the right hand to the Executive Chef, effectively stepping in during their absence to manage kitchen operations efficiently. Candidates are expected to have substantial culinary experience, preferably a minimum of five years, including two years of experience in a Sous Chef capacity. The position offers a competitive salary range from $70,000 to $85,000 per year, depending on experience, along with generous quarterly bonuses. Job Requirements

  • High school diploma or equivalent
  • Minimum five years of culinary experience preferably with two years as a Sous Chef
  • Proven ability to lead and manage kitchen staff
  • Strong organizational and budgeting skills
  • Ability to work flexible hours including nights, weekends and holidays
  • Excellent communication skills
  • Must be able to remain calm and effective under pressure

Job Qualifications

  • Minimum five years of progressive culinary experience
  • At least two years of experience in a Sous Chef role
  • Strong leadership and team management skills
  • Ability to work calmly under pressure
  • Experience managing culinary budgets and labor costs
  • Excellent organizational and communication skills
  • Knowledge of Northern Mexican cuisine is a plus

Job Duties

  • Oversee day-to-day kitchen operations including production, prep, stewarding, purchasing, and receiving
  • Ensure culinary staff creates all menu items to the highest standards
  • Run the kitchen professionally and effectively in the absence of the Executive Chef
  • Manage culinary budgets and aggressively monitor labor, scheduling and overtime
  • Lead and maintain a cohesive team under pressure
  • Coordinate private parties and special events
  • Monitor inventory and ensure quality control
