Located on 440 acres in Litchfield Park, Arizona, and boasting 331 guest rooms, The Wigwam is a Four Diamond resort renowned as an authentic Arizona experience. The establishment is currently seeking a passionate and skilled Chef de Cuisine to join their culinary team and lead the transformation of their celebrated dining destination, Litchfield's Restaurant, which is on the brink of a major renovation and culinary reinvention. This opportunity offers the chance to be the visible face of the restaurant, engaging with both hotel guests and the community. The Chef de Cuisine will be responsible for creating, costing, and executing seasonal and special menus while attracting and mentoring top culinary talent. The role requires an energetic, organized individual with a passion for developing culinary teams and who is flexible to work weekends and holidays. The ideal candidate will have experience working in high volume professional kitchens, with leadership responsibilities and comprehensive knowledge of state health codes and food safety regulations. Food handler’s certification and relevant training will be provided if necessary. Job Duties
- Serve as the face of the restaurant in the hotel and community
- create, cost, and implement seasonal and special menus
- attract, retain, and mentor culinary talent
- complete daily ordering based on par levels
- collaborate with the restaurant manager to exceed guest expectations
- train culinary and operations staff on menus and specials
- conduct daily kitchen walk-throughs and recommend improvements
- hold daily team meetings to communicate preparation and information
- attend F&B, leadership, and safety meetings representing the culinary team
- lead by example as the standard for the culinary team
- manage and control restaurant costs to ensure profitability
- have thorough knowledge of food allergens and manage guest allergies with urgency
- ensure prep sheets are updated and properly used
- guide nightly cleaning of kitchen areas and stewarding crew follow-ups
