The role of Chef de Cuisine at The Wigwam presents a unique opportunity to lead Litchfield's Restaurant through an exciting transformation. As the face of the restaurant within the hotel and wider community, the Chef de Cuisine plays a crucial role in reshaping the restaurant to become a premier dining destination. Key responsibilities encompass managing daily inventory and ordering to maintain par levels, conducting kitchen walkthroughs to oversee cleanliness and suggest improvements, and conducting training sessions for culinary and operations teams on menu items and specials. The chef also leads daily team meetings to communicate critical information and participates in food and beverage, leadership, and safety meetings representing the culinary department. Job Duties

  • Serve as the face of the restaurant in the hotel and community
  • Create, cost, and implement seasonal menus and special menus
  • Attract, retain, and mentor the best culinary talent
  • Complete daily ordering using current par levels
  • Collaborate with the Restaurant Manager to exceed guest expectations
  • Train the restaurant culinary and operations team on menu and daily specials
  • Conduct daily kitchen walkthroughs, recommending corrections, repairs, cleanliness improvements
  • Conduct daily team meetings to ensure preparation and communicate pertinent information
  • Attend weekly food and beverage meetings, leadership meetings, and monthly safety meetings
  • Manage restaurant costs, analyze and control costs to maintain profitability
  • Handle food allergens with high urgency and ensure guest safety
  • Ensure prep sheets are updated and properly used daily
  • Guide nightly cleaning of kitchen areas and follow up on stewarding cleanliness
