Dolly Parton’s SongTeller Hotel is Herschend’s newest hospitality venture located in the heart of downtown Nashville, Tennessee. Inspired by Dolly Parton’s illustrious career and indomitable spirit, the SongTeller Hotel is designed as a unique blend of music, style, and hospitality, creating an unforgettable experience that reflects the essence and charm of the legendary entertainer. The hotel features 245 rooms, two food and beverage entertainment venues, a market, and the iconic Dolly Parton Museum, making it a vibrant hub of cultural and culinary delights.

The Restaurant & Coffeeshop Manager position at Dolly Parton’s SongTeller Hotel offers a unique opportunity for a seasoned professional to lead and manage the full operations of the lobby restaurant, the Listening Lobby, and the coffee shop, SongTeller Café. This role is pivotal to the pre-opening efforts and ongoing operations, ensuring the consistent delivery of the hotel’s brand experience and achieving financial and operational goals. This management role demands a strategic and hands-on leader who can drive results while fostering a positive and engaging work culture, aligned with Herschend's Heartspitality® values.

The ideal candidate will possess strong food and beverage management skills, capable of overseeing full-service dining, coffee shop operations, and banquet/catering events efficiently. Responsibilities include ensuring brand standards, maintaining high-quality product delivery, managing team engagement, and overseeing administrative functions such as payroll, scheduling, and point-of-sale systems. A major focus is on financial stewardship, including budgeting, forecasting, profit and loss review, and implementing corrective actions to improve business performance.

Job Requirements

  • Associate’s degree or certification equivalent or equivalent on-the-job experience
  • minimum 1-2 years direct job-related experience in food and beverage management
  • minimum 1-2 years management experience overseeing at least 2 direct reports
  • ability to obtain required licenses and certifications such as State of TN ABC card, TIPS, Serve Safe Certification, CPR/First Aid, and Food Handler’s permit
  • successful background check
  • ability to obtain TN driver’s license
  • strong computer skills including POS, Micros/Simphony, Outlook, Office, Excel, and Word
  • ability to prioritize and complete work assignments timely
  • maintain strict confidentiality and judgment

Job Qualifications

  • Minimum of 1-2 years direct job-related experience in food and beverage management
  • proven management experience overseeing at least 2 direct reports

  • extensive experience in restaurant operations, coffee shop operations, and room dining
  • associate’s degree or equivalent certification or on-the-job experience
  • knowledge of forecasting, budgeting, scheduling, labor management, and purchasing
  • ability to obtain necessary licenses and certifications such as State of TN ABC card, TIPS, Serve Safe, CPR/First Aid, Food Handler’s permit

Job Duties

  • Direct and organize daily operations of F&B outlets to ensure brand standards and high-quality food and beverage product
  • ensure positive work environment and high levels of engagement among hosts
  • embrace and uphold restaurant concept and brand identity with product and service offerings
  • maintain high customer service levels at all touch points, exceeding brand standards and guest expectations
  • assist with safety efforts and ensure compliance with safety regulations and training
  • oversee administrative planning for daily Food and Beverage operations
  • act as subject matter expert in point-of-sale, scheduling, and payroll software
  • manage P&L, business planning, budgeting and forecasting activities
  • review profit and loss statements and execute improvement action plans
  • delegate responsibilities to supervisory level and hosts
  • hold direct reports accountable for results
  • execute training plans to equip hosts
  • establish and monitor performance standards
  • develop leadership in team members
  • partner with talent acquisition for recruiting and hiring
  • control food, beverage, and labor costs
  • stay current with food and beverage industry trends
  • develop and manage department schedules to meet customer demand
  • liaise with Finance, Accounting, and IT on payroll, billing, and POS issues
  • lead department meetings to review performance
  • resolve guest concerns
