The Line Cook II role at Mainsail is a vital position within the culinary team, primarily responsible for supporting kitchen operations to deliver exceptional food experiences to guests. Working in the dynamic environment of the Epicurean Hotel's Food & Beverage outlets, the Line Cook II contributes to preparing and assembling menu items with a strong commitment to quality, presentation, and food safety. This job requires a balance of culinary skills, organizational ability, and teamwork.
The position focuses on fundamental culinary tasks such as ingredient preparation—including washing, chopping, slicing, and measuring—and assisting in cooking methods like grilling, sauteing, frying, and baking as directed by senior chefs. Maintaining high standards of hygiene and safety is crucial, with responsibilities that include cleaning workstations, monitoring stock levels, and ensuring proper storage and labeling of materials.
The work environment is fast-paced and requires the ability to multitask efficiently while staying calm under pressure. The role demands strong communication skills to collaborate smoothly with other kitchen staff and ensure the smooth flow of kitchen operations. Adherence to local health regulations, OSHA standards, and SafeServe sanitary compliance is paramount. Job Requirements

Job Duties
- Accurately prepare ingredients for service including washing chopping slicing and measuring
- Assist with the preparation of basic menu items according to recipes ensuring portion control and consistency
- Support Line Cooks 1 and 2 with cooking tasks including grilling sauteing frying and baking as directed by the Sous Chef or Executive Chef
- Assist in assembling and plating dishes to ensure they meet presentation standards
- Maintain a clean and organized workstation throughout the shift following health and safety standards
- Participate in daily and weekly cleaning routines including equipment and storage areas
- Monitor stock levels and communicate needs for ingredients or supplies
- Ensure proper storage and labeling of ingredients and leftover food items
- Work collaboratively with other kitchen staff to ensure smooth kitchen operations and communicate challenges or changes
- Follow all health safety and sanitation guidelines required by the local health department OSHA and hotel standards
- Maintain a sense of ownership of the hotel restaurant
- Follow SafeServe sanitary compliance throughout all kitchen areas
