Job Requirements

  • move, lift, carry, push, pull and place objects weighing up to 50 pounds without assistance
  • stand, sit or walk for extended periods
  • reach overhead and below knees including bending, twisting, pulling and stooping

  • communicate verbally and visually with employees, managers, subordinates and guests
  • visually look at a computer for extended periods
  • adapt to moderate indoor temperatures
  • maintain neat, clean and well-groomed appearance per hotel standards

Job Qualifications

  • High school diploma
  • minimum three to four years experience as a cook in a hotel or restaurant with similar styles and standards
  • some fine dining, production and service experience preferred
  • ability to speak, read, write and understand English
  • excellent knife skills
  • ability to calculate and communicate effectively
  • basic garde manger skills
  • knowledge of international cuisines
  • strong teamwork skills
  • effective communication skills
  • ability to work with minimal supervision
  • moderate to advanced computer skills
  • food handling certificate

Job Duties

  • Work cook station and assist all other stations in the kitchen
  • execute all menu items for all meal periods in the assigned kitchen
  • understand work safety and emergency procedures
  • expedite a la carte orders or workflow assignments effectively in the absence of the Chef or Sous Chef
  • fully understand the importance of and have the ability to utilize standard recipes
  • produce mother sauces and all stocks and utilize them to make other needed sauces
  • competent in fabricating all meat, fish and poultry
  • understand the differences and uses of all herbs and types of seasonings
  • possess basic garde manger skills such as fruit displays, canapé production, display cold food, amenities, pates, dressings and cold sauces
  • produce basic specialty dishes such as paella, stews, gumbo
  • knowledge and ability to produce various types of international foods
  • understand and train on all basic cooking methods including braising, poaching, roasting, steaming, sautéing, grilling and blanching
  • possess excellent knife skills and train and monitor others with minimal supervision
  • accomplish any task given by the Banquet Chef, Sous Chef, Garde Manger Chef or Chef de Cuisine
  • calculate, communicate and write requisitions
  • follow all house rules and maintain a positive attitude
  • assist in prepping for the next day to meet food and payroll costs
  • maintain timeliness of orders from kitchen to dining room
  • complete daily tasks and communicate departure with manager on duty
  • assure daily cleaning and organizational standards
  • maintain all expected food handling procedures
  • maintain professional etiquette with peers
  • complete any other task with enthusiasm, dedication and professionalism
