Job Requirements
- must have experience in sushi roll preparation
- must have approved food handling training as required by local and state laws
- must be able to work different shifts including holidays, nights and weekends
- must be able to work overtime as required
- must maintain high standards of food safety and sanitary conditions
- must be able to handle raw ready to eat food properly
- must be able to operate kitchen utensils and equipment safely and efficiently
Job Qualifications
- knowledge of basic sushi roll preparation and presentation
- approved food handling training as required by local and state laws
- knowledge of all rolls and rice portion control
- ability to prepare and make piece sushi and rolls
- experience with proper fish cleaning techniques
- knowledge of fish filleting techniques
- knowledge of special rolls and sashimi preparation and presentation
- ability to clearly explain how food is prepared, cooked, and served to guests
- knowledge of industry standards on food storage and handling techniques is highly desirable
- knowledge of hibachi and beverages is a plus
- successful performance of duties at preceding Sushi Helper levels
Job Duties
- clean and maintain sushi bar and equipment in safe and sanitary conditions
- prepare sushi items and sides including cooking of rice, preparation of vegetables, and cleaning of fish
- perform sushi preparation functions in front of guests approximately 50 percent of the time
- carry out shift opening and closing duties including cleaning neta cases, cutting boards, fryers, grills, equipment and floors
- comply with company standards on food portioning, cooking methods, quality standards, kitchen recipes, policies and procedures
- maintain kitchen, cooking areas, sushi counters, kitchen equipment and food storage areas clean, sanitary and organized
- report any kitchen, sushi equipment or maintenance issues to manager on duty and head sushi chef
- properly handle ready to eat food served raw
- handle, store, label, and rotate foods following public health safety, state and local laws
- follow Everclean Best Practices for food handling and storage
- use knives, hand tools, utensils and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise produce food
- present a clean and neat appearance and use courteous manner with all guests
- immediately notify manager on duty when guests are not satisfied or if an accident occurs
- perform other duties as assigned by supervisor
