The role of Line Cook at Eddie Merlot's is pivotal in upholding these high standards. Line Cooks are integral members of the kitchen team responsible for preparing food that meets stringent quality and presentation standards while ensuring timely and efficient service. This position requires not only culinary skill but also dedication to maintaining cleanliness, food safety, and operational standards. Line Cooks work closely alongside Prep Cooks, Butchers, Dishwashers, Runners, Managers, and chefs to deliver a seamless guest experience. Their responsibilities include adhering to Eddie Merlot's Policies and Procedures manual, following standard recipes and portion control guidelines, handling special dietary requests, and ensuring minimal food waste through efficient production. The role demands professionalism in appearance and punctuality, a strong work ethic, and a collaborative spirit to thrive in the fast-paced, high-expectation environment of one of the nation’s leading steakhouses.
In this role, candidates will be expected to complete initial and ongoing training modules to stay updated with best practices, menu changes, and safety regulations. Preparing stations according to standard procedures and maintaining them throughout service are essential responsibilities. Line Cooks must also restock and rotate inventory responsibly and follow precise food handling protocols to guarantee safety and quality. Cleanliness and proper sanitation of the workstation, kitchen storage, and equipment are continuous priorities. Reporting any incidents or accidents is also a critical requirement to maintain the safe environment of the kitchen.
Experienced Line Cooks at Eddie Merlot’s may also have the opportunity to assist in training and supervising less experienced team members, helping to foster a culture of growth and excellence in the kitchen. Job Requirements
- High school diploma or equivalent
- Prior experience as a line cook preferred
- Ability to stand for extended periods and perform physical kitchen tasks
- Availability to work evenings, weekends, and holidays as required
- Basic knowledge of kitchen equipment and safety procedures
- Strong attention to detail and cleanliness
- Ability to follow directions and maintain punctuality
Job Qualifications
- Previous line cook experience in a similar restaurant environment
- Basic culinary skills and knowledge of food preparation
- Ability to follow recipes and portion control standards accurately
- Understanding of food safety and sanitation regulations
- Ability to work efficiently under pressure and in a fast-paced environment
- Strong communication and teamwork skills
- Willingness to be flexible with work hours and responsibilities
Job Duties
- Complete and pass required training modules both initial and ongoing
- Know the weekly work schedule, arrive at work on time, and meet standards for uniform and professional appearance
- Communicate with Executive Chef or Sous Chef to learn about nightly specials, guest flow, banquets, or special events
- Set up station in accordance with standard procedures and carry out food preparation assignments
- Re-stock and maintain sufficient levels of food products throughout the shift
- Handle, store, and rotate products in accordance with standard procedures
- Produce food items following Eddie Merlots standard recipes, portion control standards, temperature and presentation specifications, sanitation procedures, and timing guidelines
- Prepare food dishes for guests with food allergies or intolerances
- Maintain a clean, sanitary, and well-organized work station throughout the shift
- Perform side and closing duties as assigned, following checklists
- Assist with sanitary food storage, cleaning, and organization of the kitchen, walk-in coolers, and all storage areas
- Follow established reporting procedures for re-cooks, spills and wastage, problems, incidents, and accidents
- Demonstrate teamwork at all times by communicating openly with others and looking for opportunities to assist other team members as needed
- Cross-train and willingly help in other stations and kitchen roles as needed
- Follow all Eddie Merlots Policies and Procedures and guidelines for station requirements and workplace behavior
- Attend team meetings
- Communicate information regarding guest requests or complaints and ideas for improvement to Managers
- Follow all policies and procedures, station standards and guidelines, and regulations related to food handling, sanitation and safety
- Experienced Line Cooks may assist with training and supervision
- Perform other related duties as assigned
