Job Description
Cal Poly Pomona Enterprises is a dynamic and multifaceted organization that serves as the largest employer of students on the Cal Poly Pomona campus. Annually, it provides valuable work experience and hands-on training to approximately 1,500 students across diverse fields including technology, science, retail, culinary arts, hospitality management, leadership, and research grants. The Enterprises operate with a mission that aligns with Cal Poly Pomona's learn-by-doing philosophy, empowering student employees to acquire practical skills relevant to their academic and career goals. In addition to fostering student employment, the Enterprises contribute significant operating support to nearly 1,100 enterprises and scholarship programs each year. This includes contributions to Bronco Athletics and the Norman J. Priest Scholarship, administration of grants and contracts, support for campus security, and backing university publications. Overall, the Enterprises contribute over 1 million dollars annually to the university, reinforcing its role as an essential partner in campus development and student success.
This position is for a Cook working under the general supervision of the Sous Chef or Executive Chef within Cal Poly Pomona Enterprises Culinary Services. The Cook plays a key role in leading a small team dedicated to preparing, portioning, cooking, and presenting a wide variety of hot and/or cold food items across multiple meal periods such as breakfast, lunch, dinner, and special catered events. The role demands a high level of accuracy and efficiency driven by business needs, customer requests, and the unique requirements of the kitchen environment. The Cook coordinates up to five student staff members per shift, ensuring food preparation and kitchen operations meet stringent federal, state, and corporate standards. Responsibilities also include maintaining overall cleanliness, sanitation, and safety of the assigned work area, adherence to health and safety policies like HACCP standards, and compliance with all foodborne illness and allergy-related training initiatives.
Key duties are varied and include preparing foods that require both quick and extended preparation times, reading and following recipes precisely, operating various kitchen equipment for food preparation, and ensuring the timely reporting and professional behavior of assigned staff. The Cook is required to maintain a professional and cooperative workplace atmosphere, demonstrating flexibility to adjust to changing schedules including evenings and weekends. This position also offers opportunities to prepare bakery items, manage inventory logistics, and accommodate special dietary meal requests. Job Requirements
- High school degree
- Five years experience in commercial, hotel, or fast-food kitchen
- Three years supervisory experience preferably in kitchen environment
- Valid CA driver’s license
- Current Servsafe or equivalent Foodhandler’s card
- Ability to interpret and apply policies
- Resourcefulness and initiative
- Ability to work cooperatively in multi-ethnic environment
- Flexibility to adjust to changing schedules
Job Qualifications

Job Duties
- Prepares and cooks to order foods requiring short and broader preparation time
- Responsible for the overall cleanliness, sanitation, and safety of assigned area
- Ensures assigned staff report to work on time, in uniform, and ready to work
- May produce food and serve customers a la carte or produce large quantities of food for later service
- Prepares food in accordance with current applicable federal, state and corporate standards, guidelines and regulations
- Reads food order or receives verbal instructions on food required by patron and prepares and cooks food accordingly
- Follows basic recipes and product directions for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other foodstuffs
- Prepares foods by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, trimming, slicing, and cutting meat, poultry or fish
- Tastes products, reads menus, estimates food requirements, checks production, and keeps records to plan production requirements and requisition supplies and equipment
- Ensures work station and equipment is maintained in a clean and sanitary state
- Attends allergy and foodborne illness in-service training
- Complies with all Foundation HACCP standards and procedures
- Reports all accidents and injuries timely
- Complies with all company safety and risk management policies and procedures
- Participates in regular safety meetings, safety training and hazard assessments
- Attends training programs as designated
- May prepare bakery items, receive and store inventory, move and lift foodstuffs and supplies, and prepare meals for customers requiring special diets
- Communicates with co-workers, vendors, and other departments professionally and respectfully
- Maintains positive behavior and provides the highest quality of service to customers
- Maintains a professional relationship with coworkers, vendor representatives, supervisors, managers, and customers
- Performs other duties as assigned
