The Line Cook position is a critical role within our kitchen brigade, directly responsible for preparing and plating dishes to meet our strict recipe and quality standards. This role requires an individual who thrives under pressure in a fast-paced kitchen environment, possesses a keen attention to detail, and is passionate about California-inspired cuisine. The Line Cook will work closely alongside the Chef de Cuisine and Sous Chef to ensure every plate leaving the kitchen reflects the consistency and excellence our guests expect. This position entails setting up, organizing, and breaking down assigned stations efficiently while maintaining cleanliness and food safety standards as mandated by the California Retail Food Code, HACCP principles, and Cal/OSHA safety regulations.

In this role, you will be expected to perform various duties including prepping ingredients, portioning, labeling, and assisting in the smooth operation of the kitchen during peak service hours. Given the physical nature of the work, you must be capable of standing for extended periods, lifting substantial weight, and working safely around hot and potentially hazardous kitchen equipment. We require a minimum of two years of line cooking experience, preferably within a high-volume, scratch kitchen setting, and a California Food Handler Card either currently held or obtained within 30 days of hire. Job Requirements

  • California Food Handler Card required or must be obtained within 30 days of hire
  • Minimum of 2 years of line cooking experience in a high-volume scratch kitchen
  • Ability to stand and walk for extended periods
  • Ability to lift and carry up to 50 pounds
  • Ability to work safely around heat, open flame, hot surfaces, sharp objects, and wet or slippery floors
  • Ability to perform repetitive motions for extended periods
  • Ability to work in a fast-paced, high-volume kitchen environment

Job Qualifications

  • Minimum of 2 years of line cooking experience in a high-volume, scratch kitchen

Job Duties

  • Set up, stock, and break down an assigned station for service
  • Prepare and plate dishes to the recipes, specifications, and standards set by the kitchen leadership
  • Maintain quality, consistency, and timing during high-volume service
  • Perform prep work, portioning, and labeling following food safety procedures
  • Keep stations and equipment clean, organized, and sanitary throughout service
  • Communicate product needs, shortages, and equipment issues to kitchen leadership
  • Support fellow cooks and dishwashers to keep service running smoothly
