Job Description
Alvarado Street Brewery is a renowned craft brewery and restaurant company that has been serving the Monterey County community since its founding in March 2014 by father-son duo John and J.C. Hill. Starting as a neighborhood brewery and restaurant in Downtown Monterey, the company has expanded to three unique locations dedicated to delivering exceptional craft beverages and food experiences to both locals and visitors. Their production brewery and tasting room in the Spreckels Junction area of Salinas opened in 2016, followed by the opening of the R&D pilot brewery and bistro known as the "Stro" in Carmel-by-the-Sea in early 2018. Their latest addition, Alvarado Street Brewery & Taproom, located in Oldtown Salinas, opened in the fall of 2022. The position available is a full-time, hourly role at the Alvarado Street Brewery & Taproom in Oldtown Salinas, reporting directly to the Kitchen Manager. This role is ideal for candidates passionate about craft beverages, great food, and hospitality, and eager to contribute as part of a dynamic team. The candidate will be responsible for preparing and producing both hot and cold food items in alignment with the high culinary standards established by the Executive Chef and Sous Chef. This role demands a commitment to quality, consistency, and efficiency in food preparation, as well as adherence to safety, sanitation, and food handling protocols.
Key responsibilities include preparing menu items such as soups, sauces, and salads; participating in daily production planning with kitchen leadership; suggesting improvements to food quality and presentation; ensuring consistent portion sizes and product quality; carefully following recipes and portion controls; plating with attention to garnish and presentation; timing food preparation so that entrees are completed simultaneously; maintaining cleanliness and organization of the kitchen workspace; and supporting inventory management tasks such as contributing to daily food order needs. This role also requires cooperation and teamwork, compliance with company health and safety policies, and flexibility in a fast-paced kitchen environment.
Ideal candidates will bring at least one year of culinary experience in restaurant, resort, or hotel settings, possess quality knife skills, and hold a valid Safe Food Handling certification (ServSafe). Physical demands of the job include standing and walking for long periods, performing repetitive hand movements, safely lifting and carrying heavy supplies (up to 165 pounds with assistance), and working in various conditions including hot, cold, humid, or noisy environments. Job Requirements
- Able to stand walk and be on your feet for prolonged periods
- Able to maneuver on uneven ground
- Able to read and follow written English instructions
- Able to regularly twist turn kneel climb stoop bend and occasionally crawl
- Lift and carry supplies and equipment weighing up to 50 pounds using appropriate techniques and tools
- Able to safely navigate crowded spaces
- Operate food preparation appliances and machinery
- Able to tolerate exposure to extreme changes in temperature
- Able perform daily repetitive hand movements as it pertains to food preparation
- Able to maneuver packages of any weight above 75 pounds with appropriate equipment and/or assistance
- Able to move 165-pounds using appropriate techniques and tools
- Able to work in factory/production environment which may be loud slick humid cold and hot
- Able to work in indoor and outdoor environments with moderate noise and occasionally slippery floors
- Able to comply with and enforce all health safety and personal hygiene policies and standards
Job Qualifications
- High school diploma or equivalent
- At least 1 year culinary experience at a restaurant resort or hotel property
- Hot and cold food preparation and sanitation skills
- Good knife skills
- Valid safe food handling certification (ServSafe)
Job Duties
- Prepare all necessary menu items including soups sauces and salads as directed by the chefs
- Discuss daily events and production schedule with the chefs
- Make suggestions to improve the quality of food production and presentation
- Ensure consistent product portions cuts and amounts
- Carefully follow the recipes and portion control guidelines provided
- Add garnishes to completed plates of food
- Time the cooking of food to ensure that the entrees from each order are completed at the same time
