We are seeking a dedicated and organized Line Cook to join our culinary team. Line Cooks at Folino Estate are responsible for preparing meats, seafood, poultry, vegetables, and various other ingredients using a range of cooking methods including broiling, grilling, frying, sautéing, roasting, and steaming. This position requires careful attention to portion control, recipe adherence, and presentation to ensure consistency and excellence in every dish served. The Line Cook also plays an essential role in inventory management, monitoring stock freshness, food storage conditions, and equipment functionality.

Job Requirements

  • Minimum 2 years of kitchen preparation and cooking experience
  • At least 6 months in a similar line cook role
  • Ability to work in a fast-paced environment
  • Strong communication skills
  • Must follow food safety regulations and procedures
  • Physical ability to handle kitchen duties
  • Willingness to work flexible schedules

Job Qualifications

  • A minimum of 2 years of experience in kitchen preparation and cooking
  • At least 6 months experience in a similar capacity
  • Must be able to communicate clearly with managers, kitchen, and dining room personnel

Job Duties

  • Prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and a variety of kitchen equipment
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications
  • Prepares items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating
  • Handles, labels, stores, and rotates all products properly
  • Assists in all food prep assignments as needed
  • Performs other related duties as assigned by the Kitchen Manager or manager-on-duty
  • Washes, peels, and cuts various foods such as fruits and vegetables to prepare for cooking or serving
  • Mixes ingredients for salads
  • Uses manual or electric appliances to clean, peel, slice, and trim foods
  • Makes special dressings and sauces as condiments
  • Stirs and strains soups and sauces
  • Turns or stirs foods to ensure even cooking
  • Seasons and cooks food according to recipes or personal judgment and experience
  • Observes and tests foods to determine if they have been cooked sufficiently
  • Maintains a clean and sanitary work station area
  • Removes trash and cleans kitchen garbage containers
  • Follows plate presentation and garnish setup
  • Completes opening and closing checklists and assists in closing the kitchen
  • Receives and stores food supplies, equipment, and utensils in appropriate storage areas
  • Informs supervisors about equipment malfunctions and supply shortages
  • Assumes 100% responsibility for quality of products served
  • Complies with standard portion sizes, cooking methods, quality standards, policies, and procedures
  • Ensures food is stored and cooked at correct temperatures and maintains food freshness by proper stock rotation
