Job Description

This role is for a Cook who will report directly to the Sous Chef or Executive Chef, playing an essential part in the kitchen team. The position involves preparing a variety of food items that may be grilled, fried, broiled, or assembled in the pantry. The Cook is responsible for ensuring every dish served meets strict quality standards, is visually appealing, and adheres to the specific requests and dietary restrictions of guests. Additionally, the Cook contributes to the efficient operation of the kitchen by assisting colleagues, adhering to food safety protocols such as FIFO (First In First Out) storage procedures, and maintaining cleanliness and organization in the work area.

Candidates must possess the physical stamina to stand for extended periods and the capability to lift up to 40 pounds safely. A high school diploma or equivalent and at least six months of experience in a high-volume kitchen environment are preferred qualifications. The ability to communicate effectively in English, with Spanish language skills considered an advantage, is also important. Successful candidates will demonstrate strong organizational skills, a good understanding of kitchen measurements and equipment, and the willingness to learn to use Kitchen Display Systems (KDS).

The Cook is expected to work flexible hours including varied shifts to meet the business needs, reflecting the unpredictable nature of the hospitality and entertainment industry. Pay rate will be commensurate with experience and the outcome of the interview process. The work environment can be loud and may expose employees to tobacco smoke when working in specific areas such as the casino floor. The company prioritizes safety and requires all employees to obtain and maintain the New Hampshire State Health Card. Job Requirements

Job Duties

  • Report directly to the Sous Chef and Executive Chef
  • interact positively and effectively with co-workers and management
  • ensure dependable and punctual attendance with willingness to work flexible hours and attend mandatory meetings
  • obtain and maintain an NH State Health Card
  • assist and complete duties as requested by Sous Chef and Executive Chef
  • prepare food by grilling, frying, broiling or pantry preparation ensuring high quality and guest specifications
  • adjust food items to accommodate guest allergies or specific requests
  • determine if food items are cooked to proper specifications
  • ensure food is covered, dated, and rotated daily according to FIFO
  • assist coworkers to ensure efficient operation of cook line
  • prepare daily menu items and perform related kitchen duties including cleaning
  • organize and prepare food accurately for large groups
  • assist other cooks and chefs with food assembly
  • portion, arrange and garnish food per Culinary SOPs
  • maintain freshness of condiments and food items
  • ensure proper handling, refrigeration, and freezing of menu items
  • properly use kitchen equipment including choppers, slicers, mixers, grinders
  • keep work area in compliance with health regulations and departmental SOPs
  • perform all other duties as assigned
