The role of a cook at HHM is integral to the company’s mission of delivering outstanding culinary experiences. The cook is responsible not only for following recipe cards and maintaining portion standards but also for managing food inventory and minimizing waste through careful preparation and adherence to food safety protocols. This position offers a clear career progression path, beginning with the cook role, moving up to lead cook, sous chef, and progressing to assistant to the head chef.

In this role, the cook will prepare food of consistent quality, ensuring that products are fresh and meet company standards. Food preparation includes adhering to production and portion control directives, managing perishables by correctly dating and rotating stock, and maintaining proper temperatures at all times. The cook will also be responsible for checking inventory par levels for shifts, organizing freezer pulls and line set-ups, and notifying management of any shortages or out-of-stock products.

Proper storage and handling of food items are critical, with a focus on returning unused items to designated storage areas while ensuring proper coverage and dating. This role will also involve supporting efforts to control food costs by identifying problems related to waste and loss, and collaborating on corrective actions.

Hands-on operation and maintenance of kitchen tools and equipment form a part of daily responsibilities, including cleaning and adhering to safety standards such as MSDS and OSHA requirements. Overall, this position demands attention to detail, a commitment to food safety, and a proactive approach to kitchen management. The work environment involves physical demands such as standing for extended periods, lifting, bending, and working flexible schedules including weekends and holidays.

Job Duties

  • Prepare food of consistent quality following recipe cards and production and portion standards
  • begin food items that are prepared ahead of time, making sure not to over-prepare estimated needs
  • date all food containers and rotate per company standards, making sure that all perishables are kept at proper temperatures
  • check pars for shift use, determine necessary preparation, freezer pull and line set-up, note any out-of-stock items or possible shortages
  • return all food items not used on the next shift to designated storage areas, being sure to cover and date all perishables
  • assist in setting up plans and actions to correct any food cost problems, and control food waste, loss and usage per company standards
  • operate, maintain and properly clean kitchen tools and equipment
  • practice safe work habits, wear protective safety equipment and follow MSDS and OSHA standards
  • perform other duties as requested by management
