The role of a Line Cook at our restaurant is pivotal to maintaining our culinary excellence. A Line Cook is responsible for preparing a diverse range of food items including meats, seafood, poultry, and vegetables, strictly adhering to established recipes and quality standards. This non-exempt position reports directly to the General Manager and involves hands-on food preparation utilizing various kitchen equipment such as broilers, ovens, grills, fryers, and sauté burners. The Line Cook will take full responsibility for the quality of the food served, ensuring portion sizes, cooking methods, and presentation standards comply consistently with our guidelines. This role demands attention to detail regarding food safety and hygiene, timely completion of tasks, and the ability to handle food preparation during both peak and off-peak hours effectively.
Beyond cooking, the Line Cook plays an essential role in kitchen maintenance, including keeping workstations clean and sanitary, properly handling and rotating food products, and assisting with opening and closing procedures in the kitchen. The ideal candidate demonstrates dependability, punctuality, and a strong adherence to safety protocols, actively contributing to a secure and productive kitchen environment. They must be capable of working flexible shifts that may include opening, mid, and closing hours to meet operational demands. Job Requirements
- High school diploma or equivalent preferred
- previous cooking experience preferred but not required
- food handler’s card or equivalent certification required
- ability to stand for long periods
- ability to follow health and safety regulations
- ability to work flexible hours including weekends and holidays
- physical capability to lift up to 50 pounds
- attention to detail and ability to follow recipes strictly
- dependable and punctual
- good manual dexterity
- ability to work under pressure
- good communication skills
- willing to wear gloves and hair restraints while handling food
Job Qualifications

- local government food safety certification where applicable

Job Duties
- Follows food safety and health code regulations
- prepares a variety of meats, seafood, poultry, vegetables and other food items using recipes for cooking in broilers, ovens, grills, fryers and other kitchen equipment
- assumes 100% responsibility for quality of products served
- knows and complies consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
- stocks and maintains sufficient levels of food products at line stations to assure a smooth service period
- portions food products prior to cooking according to standard portion sizes and recipe specifications
- maintains a clean and sanitary work station including kitchen equipment
- prepares items for broiling, grilling, frying, sautéing or other cooking methods by portioning, seasoning and/or marinating
- follows proper plate presentation and garnish set up for all dishes
- handles, stores and rotates all products properly
- completes required tasks within assigned time frames
- tracks and reports any food waste
- assists in food prep assignments during off-peak periods as needed
- opens and/or closes the kitchen properly and follows the closing checklist for kitchen stations
- cooks only items generated from the restaurant point-of-sale system
- corrects and reports any returned meal issues to the manager
- always wears gloves and hair restraints when handling food
- maintains hygiene
- performs other related duties as assigned by the manager-on-duty
