Koshu Club is part of the esteemed Castellucci Hospitality Group, a renowned name in the world of fine dining known for creating exceptional culinary experiences. We are proud to present Koshu Club, a Michelin-starred establishment that offers an elegant and intimate dining experience inspired by the classic Showa-era supper clubs of Japan. This 50-seat restaurant masterfully blends the traditional washoku (Japanese cuisine) and yoshoku (Western-influenced Japanese cuisine) with a contemporary sensibility, delivering a unique and refined taste journey for our guests.

Koshu Club is led by the visionary Executive Chef J. Trent Harris and Chef de Cuisine Keith Miller, whose culinary expertise and artistic vision have shaped a menu that celebrates meticulous craftsmanship, cultural heritage, and innovation. The restaurant embodies a tranquil yet sophisticated atmosphere, where every detail from plate presentation to service style is thoughtfully curated. We are currently seeking an experienced Prep Cook to join our dedicated kitchen team. The ideal candidate will play a crucial role in supporting timely food service by preparing high-quality menu items with precision and care, maintaining clean and organized workstations, and executing established kitchen systems efficiently. This role demands a line cook who values discipline, has a positive attitude, and approaches service as a craft. A keen sense of urgency, strong communication skills, and the ability to work effectively within a collaborative team environment are essential.

The Prep Cook will work closely under the supervision of the chefs to complete assigned daily tasks and follow recipe lists with accuracy. The candidate will hold responsibility for their designated station, ensuring all produced items meet Koshu Club's rigorous quality standards. Maintaining cleanliness and operational standards for all kitchen equipment and reporting any malfunctions promptly to management is a critical aspect of the job. The role also encourages continuous personal and professional development through self-improvement and incorporating feedback from senior kitchen staff.

Experience in fine dining is preferred, as is an appreciation for both the cultural roots and contemporary elements that define Koshu Club's culinary approach. Punctuality, professionalism, and a well-groomed appearance are expected to maintain the high standards our guests have come to expect. Job Duties

  • Works under the direction of chefs to complete assigned daily tasks
  • Follows prep and recipe lists precisely
  • Follow directions accurately and efficiently
  • Oversees their designated station and holds responsibility for all items produced
  • Collaborates with BOH staff to ensure food quality and standards are met
  • Uphold standards of cleanliness and operation of all equipment as set by management, as well as reporting any equipment malfunctions to management
  • Strive for self-improvement and enhance personal skills by incorporating feedback from the chefs
