The available culinary position at Arrowhead Restaurant & Bar is a fast-paced role in food preparation that demands adherence to established recipes and industry standards. A food sanitation certificate is a required credential for this position. Physical demands include standing continuously, performing repetitive movements, and occasional lifting of items up to 50 pounds with some assistance. Job Requirements

  • Must be at least 18 years of age
  • have at least one year of kitchen experience
  • must have food sanitation certificate
  • knowledge of professional cooking and knife handling skills
  • knowledge of safety and food handling guidelines and procedures
  • knowledge of local, state, and federal health and sanitation laws
  • ability to understand verbal and written directions in English
  • ability to use and maintain all major kitchen equipment including stoves, refrigeration, slicer, knives, and dish machine

Job Duties

  • Set up kitchen before shift and or tear down at end of day
  • operate workstations including griddle, deep fryer, and cold side for salads and desserts
  • inspect and maintain food preparation and serving areas to ensure safe and sanitary food handling
  • follow established recipes and use kitchen equipment such as oven mixer, slicer, stock kettle, and microwave
  • follow check lists, prep lists, and order forms to ensure proper par levels and product quality
  • assist in prep work of vegetables and condiments for next shift
  • weigh, measure, and mix ingredients according to recipes or personal judgment
  • participate in cleaning and sanitizing kitchen equipment and stations
  • wash, peel, and cut fruits and vegetables as per recipes for restaurants and banquets
  • portion, plate and garnish warm and cold food items for servers
  • cook orders including special requests for restaurant or banquet kitchen
  • follow procedures for cooling, portioning, labeling and storing bulk recipes
  • execute restaurant and event plate ups and buffet items on schedule
  • follow sanitation and safety regulations directed by IDPH, OSHA, and HACCP
  • maintain cleanliness of all kitchen equipment
  • communicate product runouts, equipment issues and quality of service
  • meet dress and grooming standards maintaining professional appearance
  • maintain clean and sanitary work area to prevent food borne illness
  • provide high quality customer service to internal and external customers
