The role of Sushi Chef at Food City is pivotal in upholding the brand's commitment to quality and customer engagement through its in-store fresh sushi program. This position involves all facets of preparing fresh sushi, requiring skill, precision, and an outgoing personality. The Sushi Chef works in full view of customers, which means maintaining a clean, organized, and efficient workstation is critical. Interaction with customers does not end at sushi preparation; the chef also proactively samples products, answers questions, and customizes sushi orders on request, enhancing the customer experience and driving sales.
Key responsibilities include welcoming guests warmly and engaging directly with customers to build rapport and promote the sushi program. The chef prepares a variety of fish, shellfish, and fresh produce, prepares and monitors sushi rice with strict adherence to food safety standards, and assembles sushi, sides, and spring rolls for sale. Training and assisting other associates is also essential, fostering teamwork and skill development in the department. Compliance with Food City policies and government food safety standards is mandatory, alongside maintaining meticulous records and inspection routines to uphold product quality and safety.
Additional duties encompass inventory management, including ordering supplies to maintain stock without overstocking or shortages, maintaining proper signage, and communicating customer feedback to management. The sushi chef’s role is essential in marketing the sushi program through regular sampling events, which boosts customer interest and sales. This role demands a reliable, courteous, and knowledgeable individual who takes pride in maintaining the highest standards of presentation and quality. Physical and mental preparedness, along with the ability to follow instructions and perform repetitive tasks, support the effective execution of daily operations. Working onsite during scheduled shifts under the company’s attendance policies is required.

Job Duties
- Acknowledge, greet, and engage all guests
- prepare various finfish, shellfish, and fresh produce items to be used in the sushi
- prepare, test, and maintain food safety records for sushi rice
- assemble, package, and label various forms of sushi, sides, and spring rolls for sale to the customer
- assemble custom sushi rolls at the request of the customer
- responsible for training and assisting other associates as needed
- complete compliance of all Food City policies and procedures as well as federal, state and local government food safety standards
